Katy, a garden designer from Somerset, was explaining to me what wines she liked and what she didn’t. On the yes-please list: white, dry and refreshing. On the no-thanks list: “Anything sour.” Katy then declared that her favourite grape was sauvignon blanc, a variety renowned for its high acidity. Hmmmm. But I thought I knew where we were headed with this, so I asked a few more questions. Sure enough, when Katy talked about the brands of sauvignon blanc she likes to drink they had one thing in common: a gentle lick of sugar.
