In November, locally owned Black Cap Coffee & Bakery took over the historic train station in downtown Waterbury — the former home of Green Mountain Coffee Roasters’ flagship café. The Starbucks on Burlington’s Church Street Marketplace closed in October, but across the street at Black Cap Coffee & Bakery, a steady stream of customers are buying specialty lattes, fresh croissants and orange zest morning buns.
