Colorado Pork for the Holidays - AG INFORMATION NETWORK OF THE WEST

Colorado Pork for the Holidays Friday Dec 25th, 2020 The holiday season is winding down but there are still several opportunities left to enjoy a special meal with those closest to us. And the folks at the Colorado Ag Department have a suggestion for an easy side dish to go along with the main course. The Colorado Proud item for the last of the holiday season uses locally raised pork in a recipe from Chef Jason Morse of 5280 Culinary. Trotta: This is an Italian Pork Sausage Stuffing. We think it’s perfect for holiday time because it goes great with holiday ham or pork loin, or inside a pork chop. There’s a lot of things you can buy that are still Colorado Proud at your local grocery store like carrots, celery, onions, dried apples, dried blueberries. The recipe is savory and is meant as a side dish and features that Italian pork sausage. Pork is a super versatile protein it’s a good source of vitamins and minerals and a holiday favorite.
