EXETER – With no UFO Festival last year due to the pandemic, the owners of the new FlyBy Café are hoping to fill the void with out-of-this-world sandwiches and takeaway dinners with enticing side dishes.
FlyBy Café officially opened last month at 161 Water St. downtown at the former location of Billingsgate Deli. Co-owners Matthew and Karen Sharlot, of Amesbury, Massachusetts, said they derived the name of their new grab-and-go lunch counter from the infamous “Incident at Exeter” UFO sighting in 1965, which is celebrated in town at the UFO Festival each fall.
The design of FlyBy’s sign is a glow-in-the-dark frying pan intended to resemble a flying saucer, Matthew said, and was designed by Ivan Stanek, of Stanek Design & Work, in Hampton Falls.
