Not so fast, taco breath … Babalu is back in business, but this time under new ownership namely the same folks who run next-door-neighbor Maple Hall. In addition to new proprietors, the restaurant has a refreshed menu (predominantly) and aesthetics (somewhat), as The Grub Spouse and I discovered on our dinner outing last week. They’re doing things pretty safely. The staff is masked, and they’ve placed empty buffer tables between guest seating to ensure distancing. The Spouse and I settled into our table for two with plenty of space between us and the nearest unmasked human. The menu is pan-Latin, drawing inspiration from Latin American cuisines around the globe. But it’s not overwhelming in terms of size. Tapas are still prominent, with selections that include black bean hummus, ceviche, grilled prawns and crispy calamari. And yes, Babalu still has its signature guacamole, although it’s not prepared tableside anymore. We decided to start with an order of that for $7. T
