Last week, I attempted to debunk the common misconceptions around Cinco De Mayo in the Food & Drink newsletter, and since doing all of that research I havenât been able to stop craving Mexican food. I know every week I reference it getting warmer out, but thatâs because with warm weather comes some of the best produce of the year, which means some of the best meals of the year to follow. Whether itâs lounging around a dreamy backyard patio or meeting friends in the park on a day when the temp is in the high 80âs, thereâs no better feeling than forgetting a jacket and not even noticing. So now that we know Cinco De Mayo is basically just an excuse to eat tacos and clink glasses in the early days of May, letâs consider every day an excuse to eat tacos and say âSaludâ over dishes that exemplify the best that the season has to offer.Â

Ricotta is one of those cheeses that people donât necessarily just pick up and buy at the store to keep in the fridge the way one might parmesan or a good sharp cheddar. Weâre here to show you why ricotta should definitely make its way to the top of your list of grocery staples. Itâs super versatile and can be used as a spread for toast, a creamy and rich addition to pasta, or as a dairy base for baking.
Ricotta is traditionally made with the leftover wheys created from making other types of cheese, though it can also be made at home with just whole milk and some lemon juice. I remember the first time I made cheat ricotta with a gallon of milk and a squeeze of lemon and watched the curds separate. It was so exciting to see it come together into a soft block wrapped in cheesecloth.
