The big thing was to create coffee that people would enjoy and that would impact the food industry, George Shoemaker, founder and co-partner of Currency Coffee Co., said in a phone interview Tuesday. I would go out to eat and hated the coffee. The restaurants don t focus on it. It s the last thing you have, you shouldn t be left with a bitter taste.
Shoemaker said his coffee philosophy is to select the best individual beans. I find the best ingredients and use them, he said.
