On a sunny winter day, the back garden at Xela Coffee Roasters feels like a subtropical oasis. Leaf-patterned market umbrellas shade wire-mesh furnishings in pink, ice blue and teal. Greenery sways in the breeze, and a wind chime glitters. Vivid graffiti art swirls on the wooden fencing.

Click Virtual Food Hall. Medina begins the conversation by recounting the career path that took him from the Houston Country Club to Kata Robata, Soma Sushi, and acclaimed Tokyo restaurant Narisawa. Together with his business partner Steven Salazar, Medina opened Click in 2019. The venue operates over a dozen concepts that serve pizza, tacos, poke, Japanese curry bowls, Filipino food, and more from one kitchen and one ordering platform. Recently, it expanded by partnering with two existing restaurants, burger-chan and Ninja Ramen, to serve their dishes, too. Sandler asks the chef why he chose to partner with those two businesses.

We’ve all learned far more than we ever thought we’d need to about how virus are transmitted and the importance of wearing a mask to #stopthespread. Restaurants, along with live music venues, movie theaters, and other places where people gather in large groups to have a good time, have borne the brunt of restrictions designed to slow the spread. Lots of promising establishments have closed some before they even had a chance to build a following. One of my favorite meals of 2020 took place at Alma, an elevated South American restaurant in Highland Village that didn’t even last two months before it closed for good.
