Adapted from melissa darabians book handheld pies ingredients 2 tablespoons butter 1 medium onion, small dice pound ground lamb or ground beef 2 medium carrots, small dice 1 large baker potato, small dice 2 garlic cloves, minced cup frozen peas 1 teaspoon dry fresh thyme 1 tablespoon tomato paste 1 tablespoon flour 12 ounces dark irish beer, we like guiness 2 tablespoons heavy cream 1 package prepared pie crust, left at Room Temperature for one hour 1 large egg, lightly beaten yield 810 servings method 1. In a large high sided saut pan, melt the butter and saut the onion until beginning to color. Season with kosher salt and a pinch of sugar. 2. Add the lamb or ground beef , and cook fully until brown. 3. Next, add the carrots, potatoes, and garlic and cook 510 minutes, until veggies are tender. 4. Stir in the tomato paste and the flour and cook for 1 minute, flour and tomato paste thyme, and season again with salt. 5. Splash in about 1 2 of the beer, scraping the bottom to ensure all the brown bits are incorporated. Once that is nearly evaporated, add the remaining beer and the cream, and cook until sauce is slightly thickened. Remove from the heat, stir in the peas and let cool before making turnovers 6. Preheat oven to 375 degrees still, 350 convection 7. Unroll the Room Temperature pie crust. Cut 4x4 inch squares or use a large circular cutter to cut pastry into individual portions 8. Spoon about 12 full tablespoons of filling into the center of each piece of dough. Fold the pastry in half over the filling diagonally if using a square piece of dough , use a fork to crimp the edges, and place on parchment lined 9. Once you have assembled all the turnovers, brush them with the beaten egg. At this point they can be frozen on the sheet, then transferred to a plastic sealed container, or refrigerated for baking later. Let thaw and or leave at room temp for one hour to slack if cold before baking so the inside of the turnover is not cold when you serve 10.
