After the break were celebrating ba st well, all over the world people are celebrating bastille day today. Its kinds of like Independence Day in france. Youre looking at the parade that happened in paris this morning. U. S. Secretary of state john kerry was there. In our area french l including le diplomat and others are having specials and celebrations. Theres also a gala tonight at the embassy of france. And to celebrate this french Independence Day, we have chef christof joining us to tell us how the french cook up a holiday meal. I bet its not hot dogs and hamburgers, huh . Not exactly. How do the french celebrate at the table . It is a fairly casual holiday because its the middle of summer, hot. So theres both street fairs and also some more refined dining. I would say bistro food is a little bit of the usual casual side of french cooking. So what youre going to show us how to make, is this casual . Doesnt look like it. Sort of casual for french people. No, its not. This year with the French Embassy we have picked a theme which is bolder region. So e region. So we decided to make a duck breast and with roasted peaches. Wow. And then we have a little bit of vegetables, some duck fat potatoes, cooked in duck fat. Lets get started. Obviously i had to get the duck cooked first. So you buy a duck a breast of duck . Right. So you can get duck breasts in most Grocery Stores now. Theres different type. Anyone works. I like the mulah duck because it has a little more of a red meat texture so its kind of the steak of the birds. Im going to take that out and i will slice it. Lets see how you do it. While my sauce is warming up. Ill keep an eye on the sauce. Thank you very much. So you want to slice it in a very thin slice so you want a good knife. You always cook the duck medium rare to medium so if it shows pink, its okay. Its perfect to be rare, medium rare or medium. Past that point it becomes a little tough. Its a lean meat. Theres a layer of fat under the skin, but you will notice that the meat is extremely lean actually. So are you going to put that into the peach . No, i already warmed that up so im just going to present that on the plate. Its a little bit of a big portion. Imagine we have a big party here, which we have, right . So ill add some potatoes. Those were cooked and roasted with duck fat and some herbs and roasted garlic. In the oven or in the pan . In the oven and then i up a bit. The vegetables, we like the summer squash, get something a little lighter on the plate. You have to have your very long ta vegetables, right . So you can make two platters, one with vegetables, one with the duck. Im just going to make something for all of us here to enjoy. It looks beautiful already. And usually at the restaurant we make it all fancy with the sauces and everything, so were going to keep it that way. This is casual . Its Independence Day. It is casual. Its beautiful. Well, you know, we had to get rid of the king so the standards were pretty high in terms of the way of presenting food. So even though its a casual holiday, we still have to celebrate our heritage. So a little bit of duck, a little bit of peach, a little bit of cherry down with a little meat juice so we have a little sweetness and sourness, which is very important for duck. Oh, my gosh. The french certainly know how to do it beautifully, with such elegance. That looks great. Can i hold it up . Can you see it now, kurt . There you go. Oh, my gosh, that looks so good and i cant tell you how fabulous that smells. Of course we have a beautiful bordeaux wine for that. Ill have to get adam to join us and we will toast to bastille day. Chef, thanks very much. Get over here. Someone started pouring wine so i just showed up. Look at this, lets share. And Just Announced all right, yes. Just announced as we go to break, the shows being honored as the best on tv. Well run down the break. Take a look, we just found out the new name of the d. C. Arena football team. What is it . Man hey baby, how are you . Woman i have a surprise for you. Man you have a surprise for me . Narrator at dominion, 1 in 5 new hires is a veteran. And when theyre away, they miss out on a lot. National museum of africanamerican history opens, theres a collection recovered off the deep waters of capetown, south africa. What stories of untold sadness and suffering have lain buried beneath these waters for centuries now. What is here to help us learn about the lives lost. Some 40 decades of decembers have passed since the 12th month of 1794. Thats when the sea swallowed up a ship filled with hundreds of souls destined for savely. The ship, the portuguese sailing vessel. It was on a voyage with enslaved people from mozambique in 1794 and it wrecked off the coast of capetown, south africa. Paul had a nonstop day today as one of the curators for the new africanamerican museum of he was about to receive a very important delivery from those waters off south africa. These are materials from the first known and documented ship that was carrying enslaved africans for passage. This crate contains some of the ships ballasts found in the wreckage that arrived in washington, escorted on the plane by a South African archaeologist who was part of the Multinational Group to uncover this important historical find. He said those ballasts represent human lives who were against their will traveling, meant to keep the sail steady on its long trip. The ship was heading from Mozambique Island in east africa. Heading to brazil. Thats a longer voyage than the vast majority of ships which were coming from west africa. Belo remnants will remain. Archaeologists say its important to leave something here as memorial to the lives lost. Of course you can see more on our nbc washington app. Amazing stuff there.
