Shes cooking with a chef that you probably recognize or will recognize from the show top chef and shes going to tell us about a brand new restaurant. Plus, help for the sleepless. The fitness tool thats offering solution. A a local chef whos been at the helm of many kitchens across the country is opening her very first restaurant in d. C. Later this year. The executive chef at ripple both in d. C. Now introducing up to the world of smoked meats and vegetables with smoked and stacked. She joins us more on her new venture. Love the name first of all, smoked and stacked. What a great name. Thank you for having me. Last time we caught up you were on top chef, you made it all the way as a finalist this past . Bqpajjy congrats. We were rooting for you. Thank you. It was a lot of fun. Yeah. So now this big project, tell us about smoked and stacked. Smoked and stacked kind of came about, you know, i came back from top chef, we had done this, you know, so many challenges, so many things and you kind of like really think about what do i love, what do i like making, what do i want to do. And i love pastrami, i know it sounds weird. Who doesnt . I lived in new york, i mi sandwiches, breakfast sand wiwih sandwiches, everything on the corner, d. C. Kind of lacks that. Theres not a lot for breakfast. No, not a lot break fst places for quick on the go grab. So i wanted to bring a Little New York to d. C. In my own way. Im not a new yorker, i didnt grow up going to delicatessen. This is kind of my version of what i miss from new york. Tell us how we make your breakfast sandwich here. So what i start with is we have our house made pastrami. We brine it for seven to twelve days, we smoke it and do kind of a steam roast on it. Its a little different. So what we get is a little more tender, a little bit different flavor on the pastrami. So what im going to do for this one is fry up just a little bit of the pastrami in the pan. Even after its steam roasted you fry it in the pan as well. Yeah, for this sandwich, the breakfast sandwich. You get kind of crispness from it, and i think its a great way to kind of, you know, change the flavor of it up a little bit. So were just going to, you know, fire that up in a little bit of butter. And, i mean, you can just smell it. Like it has it smells so good. The paprika, smoke. Delicious. Yeah. So you just get a little bit of that kind of golden sear on that. While thats kind of browning up im going to go ahead and fry an egg. Okay. Because, you know, breakfast, eggs, kind of what you want. Of course. You can put a fried egg on just about anything. Exactly. Were going to let that warm up a bit. And i just one of the big things i did on top chef is i baked bread. That is something that people kind of really helped me stand out, i guess. Its a secret. We remember that episode. Its like, oh, my gosh. And i was so nervous. I was like if the yeast is dead im dead, this could be terrible. But everything worked out. Made bread. Yes. Which was great. Sfwl a lot of times with the sandwich the bread is so much a part of it, its not an afterthought. Kind of kaiser rolls in new york they kind of soak everything up, theyre soft. I just think its a great vessel. And i realized this is actually a little bit similar to that. What kind of bread . This is the milk bread. This is the bread i made on the show. Its what im going to be using for our sandwiches. And i also, you know, breakfast sandwiches sometimes you have a little sweet, little savory, so i have a hot pepper jelly that we make ourselves. And its just fresno peppers, bell peppers and i put a little bit of caraway in there as well, thats kind of bringing a little rye flavor to it. Terrific. Going to fry up this egg. Okay. Keep it nice and soft. Well kind of let that finish cooking right here. All right. Were running out of time. So were going to build it all right now so you get your folded over beautiful. And then you have your fried egg. Beautiful. To put right on top. Lovely. And then were going to finish it off with a little bit of cheese. So its kind of like a swiss, kind of like a grier, just a little bit i dont know, i enjoy it. Beautiful. Put the sandwich on. Voila. There you go. Nice runny yolk for you. I like a runny yolk on my sandwich. I do too. I think its good. Dip it all together and its ready to go. I cant wait to try it. Chef, thanks so much for joining us and smoked and stacked maybe end of summer . Yeah, looking at hopefully august some time. Cant wait. Thank you so much. Thank you, chef. That looks delicious. Its a weather alert day in case you hadnt heard, no storms in our area right now though. But tom tells us thats going to change when. When are we talking about . By maybe mid afternoon theyll be coming in our way here. And between now and then just expect a lot of heat and humidity. Its already getting pretty steamy out there. Humidity really jumped up quickly this morning. And its in place. So, yes, weather alert day which means well have frequent storm team 4 updates throughout the afternoon here at nbc 4 as well as nbcwashington. Com or nbc washington app, twitter and facebook, check it out bhen you hear thunder get inside and find out whats going on. Right now storm team 4 radar showing some showers, but turning into maybe a Little Thunder and lightning way up in pennsylvania. All of that tracking from the northwest heading to the southeast, little sprinkle around bethesda now. Heres the hour by hour timing, by 2 00 this afternoon all the area in the yellow and red, thats a zone of potential strong storms. Montgomery county, loudon into the Northern Shenandoah Valley thats at 2 00. So coming in earlier than we normally see here when we get storms cdeveloping. So then between 2 00 and 4 00 thats when it comes right into northern virginia, the district, nearby suburbs and Prince Georges County, charles, calvert, st. Marys all the way to 5 00 or 6 00 p. M. Then down to the northern nec west of there from fredericksburg to charlottesville further south by 6 00 p. M. , maybe a few isolated storms popping up from time to time between 6 00 and 9 00. But then most of it is done by 11 00 tonight. After that lower humidity does move in. So the Severe Weather threats are very low for any tornadoes, and a moderate risk for high winds that may cause some damage, hail is also a possibility. But a lower risk for flash flood because these will be kind of fast moving storms even though theyll have some heavy downpours. Well into the 80s, Reagan National up to 88. Hour by hour forecast near 90 by 4 00 with storms around and back to upper 70s by 10 00, tomorrow, low 8 0z, more humidity, more storms maybe thursday afternoon and nice friday into the weekend. Thank you, some. If youre a parent, brace yourself for more frozen stuff. Thats on the way. Characters will soon appear in new books. You can now say aloha to a hula girl here in washington. Turned her food truck sensation to a luau. Aloha, good morning. Youre a real hula girl, right . Yes. You did start a food truck here, of course one of many things you started but took this food truck and made it look like absolutely. What made you think that washington was ready for a little waikiki . I actually didnt know washington was ready. I kind of during the 2010 when all the food trucks were coming up and i thought i kind of want to do that too. And being raised in hawaii i thought lets try and see if hawaiian food is even a thing out here. And low so were people lining up in front of the truck to get this . People were lining up like crazy. We were doing about 200 people a day. Wow, what was the hot dish . I would say pokey. Was it a cold dish . It was a cold dish on a hot day. We had ahi tuna popular and when we did have it we would sell out almost immediately. I wonder if i hold this up they can see it better. What exactly is a pokey fish . For this today im using an ahi tuna. We use a little ginger, sesame oil, some hawaiian soy sauce. Its just all tossed together. Its real fresh, its real light. In the restaurant we serve with wonton chips, in hawaii you find it plain in deli cases almost. Its actually a fish called pokey . Actually, pokey roeefers to kind of the method, refers to raw. A lot of different types of seafood, youll see it with ahi, octopus, salmon, all sorts of so then you decided it was so popular might as well do a real deal. Do a real big girl thing. I wanted it to be part of a community and have kids be able to come in, adults, singles come in, just be welcoming to everybody. I understand you can bring your dogs too. You can. Absolu absolutely. Its just the brand we use. But thats rum . Yes. Amber rum. And then a ginger liquore, nice ginger cquick. Thats a ginger flavored. Sdpl theres other liquors out there but this is our favorite. And is this your own secret recipe . This is my own secret recipe. In the container is what i have is roasted pineapple puree, we have a lime and orange syrup, a ma macadami aur macadamia nut syrup. Is that something you can buy . Thats something youll have to come into the restaurant and try. There is orange syrup, macadamia nut syrup kind of blended together. Everybody hear that, going to have to do its a pineapple feel like you could put them outside. Do you roast pineapples in hawaii . We do. Traditionally pineapple doesnt go on everything, but it sure tastes good on everything. Okay. So now youve got it a all shaken. Yep. And not stirred. No. And what happens now . Now were going to pour it over some crushed ice. If you dont have crushed ice, regular ice is just as good too. That looks beautiful. Did you put sugar in it . No sugar, just the syrups. Doesnt mean its not fattening. No, no. Thats beautiful. Gives it that and then were going to float a little dark rum on top. Okay. All right. Which makes everybody kind of happy. Okay, one for me and one for pat. If not ive got some more ice for you. And we top with a little chili pineapple here. Cheers, i appreciate this. Cheers to you too. Thank you.
