Ahead in encore presentation of the faith Middleton food schmooze hope you'll enjoy this 2nd helping I get that you can see. That. It's great to have you joining the party in the face Middleton food is inviting you to eat drink and be merry with a smile I treasure 2 buddies are here senior contributors Chris prosperity and Alex province Hey everybody hey there Robin doing in Aiken is a contributor on the show Hey Rob and also senior producer and someone adore that's just the way it is all right we are celebrating the potato on this show with great recipes including Barbara Kafka's incredible melting potatoes those of you who visit the site all the time you know about these you know how they disappear on your platter these are not just for the holiday especially now that we're doing all kinds of potatoes we have the book smashed mashed boiled and baked and fried to the used to point the potato is good for you and we're going to make you very happy even chocolate sweet potato pound cake Hassel back potatoes that's the sliced ones of the stuff in between there and our edible but here's what I think we should do 1st we're going to think about potatoes somehow involved in your Super Bowl Sunday I want all of your ideas we're going to have a whole round Robin thank you but what comes up 1st the Super Bowl quiz. This is. A There is going to be a grand Is it hot here and we want you to play along as you listen this is based on information that we gleaned from the pages of Food Network magazine and I thought you know we could do this as a quiz and so that's exactly what we're going to do before we get to our recipes for potatoes and lots of other things Ok Alex I'm starting with you what is the most popular. Drink at Super Bowl parties a beer be soda see something else entirely what's your guess I'll be audience yeah you are right Ok everybody agreed but wiser if. You're even going to get that it is beer at 57 percent followed by soda that around 920 percent Ok that makes sense for people who have wings at the Super Bowl party I do yeah everyone already do they have them mostly hot my old medium or hotter than hot Chris you get lead answer but anybody can weigh in I'm going with Ok hot and idiom I was going to say mild if your feet and you know you don't know yet so here it is medium is the when are you most doing say. And that's 37 percent but I have to say for you mild people that's 31 percent so it's close on the heels of the other one hotter than hot well too hot is 29 percent so it's pretty but I love hotter than hot is only 3 percent now there are stores around the world that specialize in hotter than hot so yes the whole stores devoted to it there's one in Greenport that is just astonishing and people come in and they say give me the one that would blow someone's head off because I want to try it it's only 3 percent of the people so they make money on those stores Ok what if you had the wings that your Super Bowl party what would you dip them in what do most people do this is our Super Bowl quiz this is your average blue cheese Robin Yeah Ok one you better listen Ok ranch dressing they don't tip at all or blue cheese dressing What are you going to pick Robin I would say blue cheese but it's probably Randy Yeah but I think. Yeah blue cheese Chris that's my final answer you win that's right. But really. Right behind them Ok so now let's say you've got a dip at Super Bowl party pretty much everybody does what is more popular for dipping into stuff the potato that we're celebrating on the show today or the tortilla chip so Alex Perry is because if you're going to do that potato chips could be the odds are more in favor of potatoes they come in more but I always think of the Super Bowl as a time for a lot of black I'm all a so that makes me lean more. Towards each other than to read a sponsor I'm going with George or John I changed my yes or no idea to you Robin tortilla Ok you are right you people. The potato chip or otherwise is half Tertius chips are now we want true or false if you put out a crew to take a platter of vegetables and some kind of dip. We're still. Here exactly. No one actually eats it. You go with true true. Oh Ok people use the good negatives are good at reading I think people do eat from that tree I'm so sorry it turns out that almost half the people no one eats it Ok so I want to even take it so what I do these at the restaurant for parties I actually want to get the plastic critic tag and just have it out there because you can't do anything when you bring it back in the kitchen goes to that issue washer you kid the staff will pick at it but nobody it's back that's a comment on the dip not the vegetables so I write because we're into the thing that did dipping device just to get to the sauce right that's true for so many things all right now I want to talk to you about pizza how many people order pizza for the Super Bowl watching party. Is that 40 percent or 62 percent Chris say 62 percent saying 4062 percent. I cheated though I know for people that all pizza restaurant. It is one of the highest takeout nights of the year Ok It ain't only Actually no I'm going to change that I think it is the highest takeout night of the year this is interesting what I'm about to ask you next for Super Bowl quiz and we're going to get into because we're celebrating the potato on this edition of the most We're going to get into what we can introduce potatoes into the Super Bowl party but here's a question about the sub which is popular Super Bowl Sunday as it turns out what percentage of people say that they eat at least what. 12 inches or more of the sub on Super Bowl Sunday Alex I would say majority of people are going to say they eat a foot so what are my choices there are no choices not just America 70 percent Ok I'm going with 60 a little more than half Ok Chris I'm pointing to the sky. 80 percent 80 or 9030 percent 0001 see there have been a lot of other peanuts and pizza is probably And my final question for Super Bowl quiz thank you Food Network magazine for providing these statistics so that we can turn this into a. Here we have no no 2 questions here we have the 7 layer dip which is so traditional for Super Bowl and many other I've even made it I love all 7 layers the up she goes away or is our lives lead if salsa reefer I'd Breen's grated cheese sour cream guacamole I go to the hospital in lie down Ok favorite Layer 7 layer dip which of the layers is the favorite of most people of all 7 layers. And who's is it Chris you know Robin Robin I'm going to say the sour cream . And I like a lot of that. Anybody else weighing in here quickly are you going to go with the Glock Ok Robin I'm sorry you do not get the catalog it is a molé. Huge margin 53. Why I love guacamole but I don't want you know touching the being a G.'s and the other layers I'll explain but I will give you this Robin the next most popular after guacamole is sour cream although only 13 percent against 53 percent isn't that amazing but it's in other words it's the 2nd favorite dip you know that I'm driving you and I are getting the courage to tell you that you only want. To stay under it but you know this is bad media because. Of you media because we are you know you can't not get a layer because when you do your chip goes in to your dress you know if you're doing it right oh I have friends that are very good that could dissect it down to the guacamole and spread it out nicely and neatly and dig right in there really yeah someone could very picky eaters Oh I have friends that are picky eaters that could get if they wanted the guacamole they could get to it just giving a really archeologist style you know a little brush. And you know Seinfeld you know rules no double dip no doctor right here we go what percentage of people say the food is more important than the game itself well 100 percent of the people in this room. Ok Is it 50 percent or is 75 percent 50. I think 75 that's my guess here is the number of people who say that the food is more important than the game 75. Those are are. Ok very very good although if it's a close game at the superbowl i am so excited to watch it that kind of stress. And that's why there are other things to enjoy at the party Ok we are celebrating on the show the potato and we're going to get to that in just a little bit we have all kinds for you we have the book which is smashed mashed boiled and baked and fried to my Ragavan I hear and so we can't wait to get to him and talk with him about this but we'd like to do our cruise through great publications because we get to celebrate colleagues doing great work and we go through podcasts and television and radio and every kind of food magazine and newspaper and we start collecting things so we're going to start with Cooks Illustrated right Chris Oh Ok this is great because they did a test big panel multiple tries of which canned tomatoes are best in the supermarket it's a great idea Ok Chris what have you got they had 21 testers and they did everything they even broke it down chemically and so it was a really intense rice salt kind average and they didn't go by the back of the label like I thought flavor that lead from the inside of the can lead to chemical testing to feel. Sorry for ends that yeah it is Ok so you're ready so the ones that were the top ones s. And t. Crushed tomatoes which I like I've seen that in a couple of marks that I got That's the way I can yeah we have come to mate on an illustration in red of the plum tomato but anyway and that Red Pack which is one you see everywhere pos theme which I've seen everywhere Santo and Contadina which again is. Something you see everywhere as well right Ok So give us the top the number one the number one was s t v the one with that little be illustrations of the tomato on it that's the Sun Mars on Yeah right yeah that's a great tomato and then the number 2 which was the least expensive out of all with both faith and ice that was really showing something and that's the read back and you know what when I go through the supermarket that's usually the one I get because I know. All the other ones I kind of know but I don't use that one I always know is consistent you know I used to go from your Glenn but into the recent panel from Cook's Illustrated they're not as happy with their going as they used to be so that shows you some because that's probably the most expensive Yeah Ok so very good red pack is the most affordable and best love and 70 crushed tomatoes as am tea sun Marzano them a dose from those of the special tomatoes from Italy some cans of tomato say Son Marzano style you have to know his dad does not name their son Marzano it has to say Son Marzano tomatoes not style style is a bad word in canned tomatoes but I'm going to I'm going to throw in the cheapest again too with red Pak being $0.05 per ounce versus $0.13 per ounce. Yeah right that's huge Redback Ok You know that's a long gone Number 2 Ok that's very very good all right Alex what do you have what your tip or recipe idea looks like Cooks Illustrated did a weeknight Bolen a it's like a quick version of their long you know one that takes all day and they're talking about which pastas to pair with a classic ball an ace and they say that title to tell is the classic pasta you use a substitute would be Papa Del but they say do not substitute like a Dutch style egg noodle because they say it's too smooth. And the poll unaids just slips right off when you need the rough hone sort of edge is that like a classic egg Italian pasta so on telly it or Ok And that's really interesting because I in the past had gone toward the egg noodles because they were higher in protein then the other ones they still say they use an egg noodle but use an Italian egg noodles and they said the Di Di Canio as it comes out of the machine it has that rough hone sort of edge to it and they recommend to Checco as their 1st brand bio nature or b. And today Yeah Ok we'll see if I have time to speak of telling you Ok. We're going to say I made sure. Ok very good Ok excellent I think to check I was terrific and you know that Lydia bust Janacek told me that most people in Italy do not make their own pasta they go in the supermarket in Italy so that's a very interesting fact Ok it was you something right all right we have more food Cruise news for you here on the this since we've gone hip hop for you are I mean we're going to be taking a break in just a minute but we've got some things coming up some tips that you'll be interested in from some other sites and venue's and they're really a lot of fun and then we're celebrating the potato We have recipes they're going to drive you wild including sweet potato pound cake so stay with us for that these sliced Hasselbeck potatoes that are irresistible and Barbara cop was incredible No . Can I close my table more mouthwatering conversation and fun and head on the faith Middleton food moves I hope you'll make a charitable contribution to feed the hungry lots of people out there who are hungry on line now at food schmooze dot oh argy it will be like that. And o.c.e. I'm with my treasured food buddies as you probably know Chris Presbury chef and Co on our of Metro restaurant in Simsbury Connecticut wine broker Alex province of Hartford and our senior producer Robin Dooley on a Ken and we are celebrating continuing to celebrate the potato All right here we go Robin and Alex and Chris if you're having a Super Bowl party or maybe it's just you and your closest nearest and dearest to your house how can we involve the potato we're celebrating the potato on the show I'm thinking red potatoes I love just a low simmer until they're done scoop out a little in goes sour cream and easier with orange Roe eggs with stuff or little caviar and the others in the little one bite at a time fancy potatoes maybe some sprinkle tribes on the top of that you have. Thank you folks what could you do it's potatoes do you have to make it or can you buy you can buy anything here anything you want your favorite Torrez truffle potato chips when this b.s. Is sold to celebrate sold a bag of potato chips black to you wherever you go yes you know it's when your credit expended on. The Super Bowl is the time to do it again I'm going to wonder. You know are you there on. The terrace yourself in my life when everyone needs their own bag I think around this Robin what about your potato bar of course you have to do a potato bar higher there are you doing big potatoes Yes big potatoes and then toppings galore the sour cream. Chime I mean the fresh air of course bacon and some people think about it and that brings us that bacon brings us to Christmas but we just ate this on the show it is a dagger in Lee crispy skillet loaded potato is so good and so crazy so easy Ok go so take a skillet big skillet and I throw in chopped raw bacon in there and I get my bacon cooking on the side I have potatoes boiling I used Yukon golds but whatever you potato you like I'm not picky you boil them until they're cooked all the way through drain them and they get in your skillet you've got your bacon cooked right then you take your potatoes once they've drained and you just put them in the skillet and would have. Bake in the fat everything with a big spoon you just start smashing them or if you have a potato masher and you just start smashing them and then I put my heat back on right because the Bacons been Christe and then I just keep cooking them and smashing them and cooking them and smashing up now well that's you yeah I'm watching you and as you're cooking them brownies on your scraping those scraping fills in there and then I hosted Yes you get a mashed up you get a toasted the bacon. Fat sort of gets absorbed into it if it's too tight you can add a little extra virgin olive oil and then I finish it off with cheddar cheese and chocolate and that's if it's so good right and just a little salt pepper. So boil your potatoes and you can have those done ahead of time and then Siraj some bacon throw the potatoes and mash them with salt and just keep cooking them as crazy maybe I'm still a very nice and very unclean mashed and a little of little chunky Brown creamy and you think you can take it wherever you want you can leave chunky you know in big pieces or you can keep going and mash and mashing mash until they're totally smooth this is on our Web Thank You Korea it is so delicious potato and simple food schmoes dot au argy And we also have we love to bring back Barbara coffee melting potatoes I cannot keep. My eye out I make them and then I start grabbing at them and then they come on the back table and honestly in minutes people are looking across and boldly asking Are there any more potatoes they'd disappear because they're like result of potatoes they'd say what you drink up the chicken to our. Other And then that you just keep tossing the money and we have a video making this all of us on Facebook face Middleton food schmooze and look at a video of times like the 2nd one video on there yeah it's in among all of our videos up there oh my goodness there those potatoes are incredible you know those out of every even might the smashed ones that we just that that's by far my favorite potato you have to make double batch because you just you eat them yeah make a double batch because you eat as you're making. All right all right here we go cook we're going to we're doing our food news in cruise here on the show we've got everything we've got Robin's going Alex is going Chris is still going Chris take me to. Slow Cooker Oh my God this was perfect for me they did their best slow cooker and I love it it has to them right time tested them different ways with different dishes check the heat all kinds of things what's the number one yeah the number one and I don't have the number one but I have the number 2 and the number 4 but anyway number one is Kitchen Aid It's a 6 quarts slow cooker with us and it's heavy it's got a solid glass lid which helps it makes it really sturdy and it keeps all the juices in so that helps and we need the number 2 which is the one I have is the Cuisinarts 6 course it's a 3 in one and that's one of my favorite once used at home because I can take it out of the slow cooker the insert and put it on the stove serious things in it and that's what it is back and then it keeps warm stuff so I close here to show that they Cuisinart 3 and one is their number 2 pick up which is these are considered highly recommended they're the topic again is the Kitchen Aid Now here is why they said they want to slow cooker that is smart enough where you're looking at the controls and you know what you're doing because it's easy to understand they want a machine that senses when to turn higher and when to turn lower all by itself and that they says in the best does that and all 4 of them have those features but the Kitchen Aid does it better than any of the oh yes and so that is fantastic Which one looks the best so. Which one looks I think the Cuisinart looks the best with a Kitchen Aid So it's the one I. Had they like for the even simmer. Believe me this will be number drum roll please 27 because I want the kid you have the I don't have a 7526 No no that will be 27 is a partner for a wife to carry dad yeah I will hopefully be hopefully they'll become collectors I didn't I get an idea of having money. But I usually like to be driving down a road and see that side of the cars. On a house you know cry posy and go to the I think you should call the slow cooker though if you're going to buy them all slow cooker museum how incredible with recipes that you can get there and maybe some of some of them on that day for hours and I have been really low I don't feel I have 3 that are old from like the seventy's that I got to some think I should start scouring and looking to online for a really old what is the go back to the don't think I have to say that so often I find things in Cooks Illustrated So here is one that I think is terrific when you pre-baked pies show they're always telling you to put you know you will or something to protect to prevent to PIII crust from burning when you're baking the filling and so you're wrapping it was for oil and it well here's somebody writing in to say my method is to cut out the center of a disposable aluminum foil pie plate she cuts out the center which leaves only that ring while and then Mar If yet a smart clever because it actually sell things you can buy but the store does is almost every bit of it you have that you think you've got the pot I. Enjoy it over and these so she just cuts out that circle with a pair of scissors flips it upside down and it covers the pie show that's already 3 big and you don't want that to burn so Ok we all like that if we still got Cooks Illustrated before I quickly go to Robin what do you have so bakers know that the 1st step when you bake a cake is always to prep your pan when you have a bundt pan you have a little bit of extra thinking to do because you have crevices in there and eat you really have to practice pan correctly so Cook's Illustrated has a favorite bundt pan and I'm going to tell you what makes this pants us special it is called the Nordic Ware anniversary bundt pan and here's the thing it has handle . So you're going to be able to lift the pan off your cake without ruining your beautiful peaks and the beautiful shapes of your cake really smart that's an interesting gold or something and I think they saw it not in this particular Nordic Pan I saw pictures of the cakes that were coming out because I have a bun pin and I love it this one is really heavy enough and also it has it makes that crisp Enos all over it's like having an entirely crispy tray of brownies I mean that's really what it does holding these Nordic wear special edition and then a very Panamera you got to get in there you're about Alex province What do you have Ok so so they do a sit your is zester in channel knife review and so anyone who makes like I say called martinis Yeah you know the marketer kit the channel knife is the one that cuts the thick ribbon and then disaster as other peel of peel of the run of a lemon or you know other such as and disasters like the little threads and so they review you know a handful of them from $6.00 to $18.00 and their favorite is one that costs $899.00 it's the miser Meister Pro Touch combinations Aster the German wine. Ok excellent That's good to know I wanted to now switch over to Food Network magazine who have been doing their great things but I want to do it right now because Chris you know talking about the slow cooker is they asked one of their contributors sunny Anderson and somebody wrote in to say do you have any suggestions for making an easy caramel sauce was you know that's going to happen here. I love thinks why I do you know I do the old Boy Scout trick of putting the condensed milk in a simmering pm without opening it the whole can goes in submerged and you cook it in there for a period of time and then when you open it it's cooled down you take the lid off. It is now Caramel the condensed milk has turned to caramel and sugars have intensified Here's what's funny Anderson said she says I do the same thing I put cans of sweetened condensed milk in my slow cooker genius then she doesn't have to watch it easy as she covers the cans with water cooks them on low for the 8 hour setting removes the cans with tongs because they're very hot lets them cool to room temperature and then opens them and inside you have caramel sauce you don't have to stir a thing take it your way and made it full proof made love illegal then you have to watch it right because the water you don't want to have all your boil away right there is no service at the museum totally signature to get it that's our signature just scream with Carmel Yeah I know Ok go ahead it's all right I have one from from Food Network magazine and it's keen Well corn chowder and it's just a great recipe of a simple corn chowder and it has all the regular gradients and as you dish it going well so it's a great recipe so looking cream or mil cream or heavy cream yeah a little bit heavy any bases room bacon shrimp Yeah you're good our chowder and I just love your fish and can you make one up yourself I like the addition of King I've got another one and this is a pretty cool one that I just recently discovered and it's making pasta and a quick sauce Now have you ever bought my cheese and it comes in the brine or that yeah it sure everyone throws that liquid away including me so I actually tasted that liquid I've never tasted it I know yeah it's like milk like when salty lightly salty sauce like you know what why couldn't I in a pinch so I cooked some pasta I drained the pasta out and in that same pot I threw in a little bit of that liquid I chopped up some Monsoreau and some grape tomatoes threw back my pasta and I was like oh my God this is a great pasta own Mike that's a fantastic idea and it works which fed a cheese to. Yes you like strong so this is the mild version and if you get your own bra and she were trying pasta Yeah it is pretty cool stuff I've been using fresh mozzarella probably for 25 years I've never tasted that liquid I never have times I dump it before I even get the cheese right you know put the container right down the drain so next time I am to make a pasta out of it you can do the same with a killer like same thing caper liquids a little stronger but you could add a little bit of that its own planet slightly salted if you like it on the cake No I was thinking if somebody has got to watch out for salt don't this is not a good I know this is the one to use don't use the fed of one because the federal one I found to be really soft Oh. Quick I don't have sauce I don't know what to eat but I have cheese oh I love that Ok here's another one you know when you have a bone in cut this goes with chicken it can go it's beef whatever it is a little Cornish and yeah and I am hoping that my knives are sharp enough so I like . Doc and then I'm supply engine a knife into the center and I'm trying to cut it in half Well here's somebody writing in to say that if you use the mallet you know where you take a piece of meat and put plastic wrap on it and pound the chicken breast. Or whatever it is if you use that rubber mallet you know you put your knife right where you want it on the say the chicken breast with the bone in and then you whack it with the mallet bang bang bang it goes straight through the bone right in half scored it right through the center where you get a rotary duck Oh I go a dong in West Hartford. A lot of places right off the bone but outside of the Asian markets have that I just pulled the me right off the thing I chop it up and I make a salad and I do a kind of Asian dressing where I'll put sesame oil in soil and lined juice and chopped up mint and rice wine vinegar sometimes a little pinch of sugar and I mix it all. And then I thought to try to duck meat on the salad with chop scallions bang. Oh and you can't miss it the 2nd you walk through the door the door opens and you look to the left and they're right there boy are they good now we love the local Please support your local food growers and food makers we're going to celebrate potatoes coming up next for an on demand podcast delivery of the food party every week and to find all of our recommendations go to food oh argy in the potato recipes coming up they're all they are Stay with us. Not a great party to be part of I wish you were in the studio with us because we're having a ball really and have had such a good time trying potato recipes so I wanted to start here because a lot of people when you say potato say it's wasted carbs and they're not good for you and I read your little post here in the book about potato no true it's not true is it right about it's not true at all it's one of you know you're right about. Terms of nutrition and the head of a really very very big for complex carbohydrates and that's where we want break down. And. Certainly not waste a car at all and in addition to that you know this is very hard for. Approach to some really really good vibes. Sometimes we talk about protocol. Much. Cereal I think. Perfectly right that started the day with a bowl of the I think that is. Exactly what I want to do never mind meal I would like a baked potato with things on it and that's true we have lots of ideas thanks to Ragavan Chris we've got posted your recipe for crispy loaded skillet potato. Just unbelievable with bacon and sides Ok I do too we're going to another show talk with Alex province about a tortilla and Spanish This would be a kind of quiche with potatoes in it that you leave on the counter all day and just snack from a that's coming up on another show Robin I know you have a long history with potato got relatives and we have relatives in Idaho so I have had their reality in the world for sure unless you live on Long Island where they feel like they're competing and they make some great potatoes out there Ok Ragavan Let's go to your recipe I'm going to resist for the moment your sweet potato pound cake recipe because we're going to get to that can we start with your potato leek pie this is a wonderful this is on our site food. Along with our Christmas recipe this is a great idea I love leaks I want to. Read. The combination I want to quote write that you would find something like that and then turn it into something a bit more upscale and I thought you know that. The pie crust. Very simple to do. That you know you can bring it from. Them to the table directly and it's breathtaking and it's spectacular and the flavors and the aroma They're just beautiful in your crust you have several islands is of cream cheese what does that do for the dough actually provides an additional source of fat but it also provides flavor and I think the mouth. Certain along the quality look for a great share power and then the cream cheese makes it much more trick tasting and I think that the surprise element and there are very simple techniques of making the pie crust and that's something that some of them ahead of time let's go for your filling because I'm going to save potatoes using for a moment and let you tell us about that but you've got leaks and butter and fresh time and then shredded cheese that you might like including Greer which is the one I'd probably go for but you give many choices and then a sauce a creamy home Pena sauce so there's a little simple recipe that follows what potatoes did you decide to use for this pie and why I used the wreck to take it out you could actually enter trends and varieties as well but I use the red potatoes because they are much lower and starts in the higher Nordstrom because of that they lend itself very well to sort of holding their shape down with that and much more quickly and they look gorgeous and oftentimes you can also find some potato varieties that are also red flashed in addition to the skin being red and you do a combination of that and you combine that with the little. Time I think the flavors are really quite come alive but again you know all about the potato on the right kind of a tad on the water there there's a lot of. Controversy about it is you all know on the show who makes the best kind of French fries are they skinny are they fat is there such a thing or they had one. So. We went to Ragavan Ayers recipe for all to mit French fries I'm going to try these to yeah Now here's what you have a little trick on us want you to tell us about your trick and why you think these are the ultimate And let me precede this by saying when I'm going to restaurant and I was in one the other day Carson's on the green in Guilford Connecticut they have truffle fries with Parmigiano Reggiano and fresh parsley sprinkled in there and various dipping sauces they gave me extra truffle oil in a little bowl of extra cheese so I had a. Good thing it's Ok so tell me what it is that you're doing with your French fries the ultimate French fries really begin with the ultimate But there's nothing better than what I call the work among the poor which is. What people think about you not the garden variety the. Audience. That they lend them so beautifully well so their appeal you can leave the skin on by the way our personal choice and then you. Talk about in the book it's. Really crucial the initial down at about $325.00 degrees Fahrenheit and. You want to make sure that it's not and as soon as the barely cook you take it out and still drawing on the rock I actually did with a little bit of quantum stuff this is the trick that I want to try. Yeah that's what. Chris that actually Chris. Said when it comes out of the fog you know that's so smart big. Some people might use of flour but this ends up being gluten free. You know you don't get a lot of it and so I think if you spread the corn actually turn all of the presenter that way you know so. Therefore. They're ready to go like to have them in the freezer. You know that's a very safe thing to do should there be something going on you need to get that part of. Running to the exit I'm running for the potatoes something. We are talking with Ragavan I your we have information posted about his cookbook and some of his recipes we thank him for that smashed mashed boiled and bake that's the name of his book 75 recipes for potatoes including dessert potatoes we're going to get to those and fried too as you just heard before we get to your pound cake Hassel back potato like the rage that right cardamom binary this Indian flavor coming back potatoes with cardamom butter if you ever seen a potato that is sliced fly sliced lived. Served it all the way through it so it stays like a fan and delicious things put in because. It isn't a thing it's a Swedish technique of french fry. I found it recently and ever since I made it once I make it all the time not so good Ok so listen to this with the cardamom barter. It is what it is concoction and I think the pale March to the time I live in a part of the country where we have a large population. So I want to think about the Christmas cookie. Reader's community card in a minute with. That come from India which is a member of the gender family and the beauty of cardamom is that you don't need to quater that dish with anything else and. Just a little bit of garlic and then you throw in a couple Billy. Bob's great basically that. In the oven and that you know. Not all the way through and. Then like an accordion. That. The. Father and I don't know. If it's like finger food and also I would say Can you imagine you having some people over or just for yourselves on a weekend if you're doing something simple for the main course what a lovely side dish to serve with roast chicken or. Throw a roast into the oven of whatever kind of mean. You're doing anything but your effort goes into making the sliced potato and how easy is this to slice it and then put this cardamom butter or flavored butter that you might prefer with a different spice whatever it is I mean here's a beautiful recipe so that's on our website or gee we are so Robin and I were talking about this we're so excited about this recipe that we also have on the site thank you chocolate sweet potato pound cake. Plate that said out of nothing to do with the $10.05 it's probably different plans my editor and I. Know a handful of these in the book as well which of course a lot of them lend them well dirt and. I cannot think about a better combination of. The. That's right that's more quality and i course in my signature style I tried that with the I am not expensive and they're like cinnamon I'm not mad not close and the black pepper Actually I think element because you know what I can with food and flavors that pepper the sort that you actually accentuate the sweetness for that right now and the fruit because I don't get much sweeter and the Roma come together for you know want to go no they all recipe that you want the batter into a bun and I always think you know whoever invented the bun they're fiction because that is pretty genius and I know we love them too and that comes out of the oven and that I can barely contain herself and you know if you just stuck to it with a little bit of powdered sugar if you want to splurge you know once it comes out of the oven cook some whole in that pound and then. I might even squeak a little ice cream on top of the. Yes so good or even sprinkle coconut you know you could put nuts on this you could treat it like the Thanksgiving sweet potato casserole same kind of marshmallow this. Really. Smart idea herring chocolate and pepper and these other spices with sweeping Taito so so smart right about quickly last question before we sadly end our time together do potatoes work the way that apples do where there are heritage types of potato that have been lost through time yeah yeah really much so you know this visit we're going to why this is the 4th largest crop in the world and mating and now South America right there alone there's about almost 4000 of our ideas of. I wonder why the over 5000 so there's something I don't know that I actually you know be glad to do well with math production. Pretty much even climates all over the world certain ideas of course you won't find outside of South America because of the fire conditions there and all about what's good for the well but now you're starting to see people desire all the varieties of the cat out that were. Considered heritage but I don't but they all look so beautiful on the colors of the flavors come through and South I had an opportunity when I was in Canada to interview want to do lead their research on for the Canadian predator Research Center you know Fredericton and in the book I call it the potato whisper and you know just for her to explain the process I'll move I don't come to the place or Holland all by all is crossbred now to withstand really good growing conditions and so I think you started to see that and then of course my ultimate dream will be to do 'd another book on the table. To see just how I know if you do trilogy it would be. You would be you. Know the way the world according to the but they know this is right for you. Saying. Thank you so much for coming on the show for giving us all the recipes we talked about for website My plan for I hope you join us again because I love your take on things that the international Spice is mixing with what is one of our favorite ingredients thanks so much from here Ok bye bye Well this book is called Smash mashed boiled and baked and fly to the back of on fire I want our seats from the start or change we're on w n.p.r.
