You can get a big loin like this. Cut it into a steak. You can have the fish monger do it. Its easy to use and its forgiving. Its not a fish where, it has to be exactly this moment or its no good. I put a little bit of olive oil, salt and pepper. Simple. We should talk about the ingredients. Fish, olive oil, salt and pepper and corn, red onion, red pepper, lime, basil, jalapeno to make the relish. This is stealth wellness. I dont want you to be on a diet. Just eat better. How long do you cook swordfish, different from beef . Its not 15 minute as pound kind of thing. Right. Basically we want the warmth to the center of the fish and its cooked. This will take a good two and a half minutes. Then i will cross hatch it, turn it the other way and three minutes on the other side. Pretty quick. Yep. Red peppers. Many people are challenged about red peppers. I like to cut off the sides, leave the seeds in the middle. Its easier. Right. Then lay it flat and filet out the middle piece. Dice it up. You made that look easy. I struggle. Corn relish, simple. Corn, onion, jalapeno, into the pan. Into the pan. A little bit of a saute. That gets cooking. We have water to help the corn cook. Everything comes together. Okay. Season it with lime and basil. How long would you go with the sword fish . Is there a point at the end of summer its out of season . No. Sword fish can keep going. Other fish we stop using like striped bass pretty much comes to an end. Im ak lay huge bluefish fan. Im a jersey boy. Some people say thats not a good eating fish. You dont agree . I say bluefish, a great fresh piece especially if i caught it eating it the same day, i will put it up against anything at any price. Okay. You will dress these up a little bit.
