But we are going to toss them with olive oil and a lot of salt and pepper, and shiitake mushrooms have a meaty flavor, and when you roast them, it will intensify. Olive oil, salt and pepper, thats it. And so you sauce it up, and put them on top. Ooh, that is good. I like to top it off with parsley, and this sauce is great, because you can make it the day before if you want to prepare it in advance, and almond parmesan.
