I like from the snake river farms in idaho,o, love this ham, a lot of great ham makers out there. Crushed pineapple, mustard, original zest, honey, brown sugar, cinnamon and some cloves. Okay. Youre going to take your ham and fat side up, and youre going to cut across. Theres a big cap of fat on top this. Score this across and youll mama these cross hatches. Nice. And then youree going to put a bunch ever water in the bottom of the pan. What does that does is. It will keep it for burning. Have to watch it because as it cooks the water may ivap ate it. You kend it and put it in the oven according to the instructions you get from the hammaker and you put that in the oven. That will go in. Make your glaze. Youll put in brown sugar, crushed pineapple and some mustard. Delicious. And some honey. A little lemon zest, and and original zest and lemon juice, and and a little pinch of cloves and throw that all in. And youre going g mix this up. Youre going to cook it down. Like a syrup and once thats in, youll take it out of the oven and whether theres an hours worth cooking and youre going to keep glazing it during the cooking process so it get a caramel cruz. Gorgeous. When an hour to go youll takeheliced pineapple, usese to love watching m m mom do. Would take it and put it all around and stud it with cloves. Thatsakes a little long. You put it back in the oven for another hour and let the meat rest, let the meat rest and while that rests Brussel Sprouts, i take them and i cube the bacon and render it. You basically remove the bacon on to the sheet, baking sheet that has some paper towels so the oil will drain off but bacon fat left in the fan. This is so good. Okay. I also take about 20 cloves ever garlic and peel those. Youre going to take a pound to two pounds of beautiful Brussel Sprouts, small variety. You dont especially when they are this small. All right. And then youre basically going to coat these Brussel Sprouts and garlic in the bacon fat. Oh, my gosh. So good. A little salt. You let them cook there for a while. Let them cook covered. And i actually sometimes jut like putting them right on the baking sheet. Put that there. You dont put the bacon in just yet and you put the bacon in after and into the oven and about 350 to 5 for about 30 minute. Youll bring them out and take bacon together and serve it up like that and slice your ham. Delicious. At the bottom of the pan, youll skim off this the clearest part and be left with the stuff underneath. Whisk in a little water and flour you have a fantastic ham gravy. Just yum. Look how beautiful that is. Looks so beautiful you shouldnt eat it. And look at that. Look at that. And you eat it for the rest of the week. Makes great ham sandwiches.
