The sentate voted today for two bills setting up a 4percent increase to basic state aid. Leaders in the republican led house support a 2 percent increase. Governor Terry Branstad supports point45 percent hike in state aid to schools. When moving from elementary to middle school the transition can be difficult for some students. This year, the Sioux City Community schools sent fifth grade ambassadors from each of its Elementary Schools to West Middle School this morning. The goal was to show them what sixth grade will be like, next year. I want to learn about all the classes and whats different from Elementary School and then i want to just take back everything i learned to the kids in my class, said lincoln Elementary School fifthgrade ambassador abby hammer. The fifth graders learned how middle School Schedules work, and went over middle school rules. They also shadowed west middle sixth grade students to learn from them, firsthand. So, we are making salmon tacos today, because february is also Heart Health Awareness month, so trying to get in more of those fatty fishes, omega 3s for the heart health, and its also going to come up to be lent season here before we know it, too, so trying to get more fish in this recipe can really be used for a lot of things. So, im going to walk you through the ingredients i used and then im going to show you how i made my really simple pineapple salsa. S okay. W i think what makes it seem so special, like you are going when you have a lot of colors, a lot of textures, kind of. You eat with your eyes first, so it makes it seem a lot more special if youve got the sweet, the savory, the, you know, really balance of flavors, so that way you can kind of skip the restaurant on valentines day and stay home. So, i just broiled some salmon at home that was frozen. If you wanted to even to cut it down even more, you can use the smoked salmon that you buy already prepared. That would be great in here, or if you have a smoker at home, that would be great. For my greens, i used a spinach, lets see what else i have in there. Cilantro, and cilantro is one of those things, some people love it, some people hate it. I absolutely love it, but that is something i usually dont put into a dish when im making it, i let people add their own, because not everybody likes it. But i absolutely love it. And then for the sauce, i love chipotle sauce. This was the only one i could find yesterday. I was looking pretty fast, but this is the only one i could find, so this is a full fat dressing, but to cut down on the fat and the calories, i mix it with some greek yogurt, because i would put sour cream on a taco anyway, so this is a good way to add more protein, cut down on the fat and calories, and still get that nice southwest because i like my fish tacos, or, just any fish in general, to have some really nice flavor to it. So i think it pairs really well with a sweet salsa, so this is really easy. Ive made a lot of sweet salsas before with a lot of ingredients, and this one is definitely the easiest. So, i cut up a fresh, a fresh pineapple. You can use canned as well, but i like the mix of fresh and canned ingredients here. So, about a cup of fresh pineapple, about a half a cup of mandarine oranges, and you want to drain those as best you can, i just scooped mine out with a spoon, so i do have some juice in there still, some jalapenos, so we get a little sweet, a little spicy, and then you want to zest some lemon, i mean, excuse me, some lime into there, and you know, the recipe says a whole lime, but i typically dont like that much zest in mine. So as much lime zest as you like, and sometimes give it a taste when youre all done. Sometimes they need just a pinch of salt and a sweet salsa, just to balance the flavors, and thats all youre going to do. These flavors marry together really well.
