Uh, a couple years ago the usda decided to try to simplify the meat case for people because there are all kinds of names and its kind of confusing. Sheila and choices. Joyce and choicic. So, they renamed it. A lot of the new names are for pork, but they renamed all meats, a little bit anyway. So we have, to simplify things for consumers, they renamed the rib chop, and this is a boneless rib chop, the ribeye chop. Sheila oh, ribeye. Yep. Joyce it comes from the same portion or area of the carcass that a ribeye steak would come from on the beef carcass. It come from the very front p ption of t t loin. And this is c cled the center cut chop, which you may still see it named center cut in some grocery stores, or iowa chop, if its a thick cut. But it can also be called e porter house now.
