All he knew was that his favorite uncle his uncle mitch loved this town. Its really hot at night. Reporter this is mitch driving into the city on his own and only trip to new orleans in 1992. He spent just a few days here although according to his nephew he never really came back. In his head he never came back. Thats right. Because when he returned to canada he had a bunch of cajun recipes. He started his own catering company. Reporter mitch started up a local radio show called mardi gras mum bow all this in saskatchewan of all places. Growing up dominic heard so much about new orleans from his uncle he knew he had to get there some day. And when mitch died a couple years ago of a heart attack at just 42, dominic realized you cant wait for some day. So he began this epic journey. Dominic did it partly as a way to let off some grief but mostly just to give his uncle one last great adventure. Tucked in the boat safe and dry the whole way a small vile of his uncles ashes. Dominics family met him at the dock. Then they all went to a quiet corner of new orleans held hands and let go. Youre where you belong. This afternoon, some men on a field are going to try to reach for greatness but real greatness isnt always what you do in life. For his oscarwinning role as the young vito in godfather 2 deniro took Marlon Brandos character one step further. He learned a sicilian dialect. In the entire film he barely speaks a word of english. How difficult was that . Well, its very difficult. You know, i only learned the pieces that i had to for the scenes because to learn those pieces and try and speak it with the proper accent, inflections blah blah, blah, you have to practice a lot. Reporter it all started in 1943 when he was born to parents Virginia Admiral and Robert Deniro sr. In greenwich village, new york. Both were accomplished painters. His father, a figurative artist, had his work celebrated in galleries all across the country. My father was an artist since he was i think five. He was very particular. We have our own music architecture, way of speaking, and of course food. Fried food like and sweet and rice dishes but our signature dish is gumbo. Gumbo is symbolic of the best of new orleans. Its as much a cultural symbol of louisiana as the bayou or jazz. Thats why like new orleans herself, gumbo is temperamental approachable but unpredictable. And across america no dish speaks more vividly of a melting pot than gumbo. Its a complex mysterious dish born of necessity bringing together a multiplicity of ingredients and ethnicities. Dating back more than 300 years being believe the west african slave population first created this dish out of hardship. The name gumbo derives from the world king gumbo which is the name for okra the popular ingredient. The indians developed the key powder from sassafras leaves and the french lay claim to the thickening agent known as the rue. Now we didnt know any of that history when i was growing up. But when we saw those ingredients for gumbo come through the front door we knew it would be time for a celebration. And it was. You can find gumbo in every corner of this city and argue every day as to whose is best. But the answer always is theres no better part of gumbo than one made at home. The best way to learn i think, is from your great grandmother or your grandmother. Reporter new orleans chefs middle name might as well be gumbo. When you start making this specialty. When i was a little girl. By high school i had it down. Reporter i take on the signature dish as revered by those near and far. It all starts with making a roux doesnt it. Reporter she says a few steps are required. First, the allimportant mix of flour and oil that makes up the roux. Then i just stir. You cant answer the phone. You cant go to the door. You cant leave it alone. Reporter and every gumbo has to include the holy trinity of vegetables. You get the onions. Reporter onions cellary and green peppers. And then thats going to be followed by her favorite, okra. But after that, its really just a matter of taste. Now how do you feel about tomatoes. Reporter and opinion. The most important ingredient i think in any gumbo are the gumbo crabs. Reporter bring em on. Bring em on. Reporter as long as its made with louisianas finest. This is how were going to get that flavor of the sea. Reporter and strained, simmered and stirred constantly with love. The result will always be quite poignant and soulful. Like the Crescent City herself. I hope weve shown that theres a big difference between gumbo and just any old soup. Gumbo is a full meal its a tradition and a philosophy. The fundamentals dont change but the variations are endless. A good part of gumbo is so much trouble to make nobody ever makes a small pot which is fortunate because with a good pot on the stove your whole neighborhood might just end up in your kitchen. Who can impose themselves with their physicality on the other. You look at both quarterbacks. They have such contrasting styles to me. You have joe flacco who is a dropbackpasser who is going to get the ball down the field and kaip nik can make the plays run into football and throw from the pocket. To me it will be interesting to see what style prevails in this game. I remember, coach in my super bowls i got to the stadium five hours early because i was going to lose my mind if i stayed in that room. You already lost your mind.
