Such a skilled bunch, we thought it was about time to throw all the chews kitchen talent show. [ cheers and applause ] were also kicking off summer headquarters week. Summer headquarters week, were kicking off, which means that were your destination for all the summer recipes and tips you need. Okay. [ cheers and applause ] so, it looks like we lost batali there for a second. Just for a second. This weekend, if you live in the northeast, you know it was the most spectacular weekend. It was two gorgeous days, saturday and sunday. A little chilly. Today, its a little bit rainy. I had a great weekend of gardening. Michael, i know that you finally took a day off. I did. It was first day off in about eight weeks, you know. Been working hard at so and it was a beautiful day, so liz and i are like, lets enjoy the day. And as you guys know, here, maybe not at home, i have a slight real estate problem. Slight . I move around a lot. Because we travel often were going to down size. We found what i feel is a perfect apartment. Exempt the apartment is pretty small and it has one bedroom and one bathroom. Thats a big mistake. One bathroom for two people . Yeah. What concerns me more than the bathroom is liz is slightly what i would call laundry obsessive. You know . Like she theres no washer and dryer in the apartment. Oh. The laundry room is in the building. So, were talking about this. Im getting very anxious, so i go outside to get a little bit of fresh air. And i go outside and i look up and theres this. Can you see it . It was like a sign from above. We could do this because i no longer have to wash my underwear. I got liz drunk and convinced her that one bedroom, no laundry room is the way to go. All right. 20 all you can get paella. Its so relaxed and so fun and so slow, spain. Gin and tonic. Carla is texting me feverishly last night during the Billboard Music awards. She was like, are you watching this . Are you watching cher . Do you see cher right now . Im like, i see cher. I know her. You were obsessed. I was obsessed, because the thing is, she is such an icon. Yeah. And what i love in addition to the montage that they played of her, like her 53 years of her career, which was amazing. What i love was watching the audience watch her. Yeah, yeah. Because they were like ah. Cher. And everybodys singing the songs and everything, you know . And these new songs, nobodys singing. One person is singing. Right, right. Whereas when you have an icon, everybody is singing. Everybodys into it, because they all relate to it. I think people were also just in awe of her that like she has maintained her physique, shes maintained her image, shes maintained her idol status. And i loved everything about this, but i have to shoutout to celine dion. I know that you guys are a little bit older when titanic came out, but the fact that titanic is 20 years old i cant believe it. For me, i swear i was just first of all, look at her dress. She looks amazing. Her dress is everything. Shes elegant. The chandelier lifts off of her, yes. She is an elegant woman. This movie, though, i think it was pg13, and i think i was 11 when it came out. I remember having to beg my parents to let me go to this movie. And when he walked in if you guys remember when that sweaty palm comes up in the car, i was like, oh, lord. Whats happening in here. It was everything. It was my sexual awakening. Oh. At 11 . Oh, my god. My heart must go on, because celine dion, you look fierce. It was amazing. Yay. Okay. Who brought lunch today, because all right, i arranged for lunch to be served here. This is from swingbellys. I had their pulled pork sandwich. And they did pulled chicken for you. It is so incredible. And dont forget the pickles. The pickles are the jam, and they gave me some of their dry rub that they use on their pork. Tell me thats a good barbecue sauce. Tell me what you guys think. That sauce is good. Mmm. Really good. Speaking of pulled pork, this weekend was memphis in may, and big bob gibsons won the grand champion again this year for the fifth time. Its a new record. Its never been done before for pork. Im going to put you over here, so you can see everybody. All right, i feel the heat. Oh, you feel the heat over there . Were going to make something delicious a little bit later. Can i pour you a daiquiri . Duh. Duh. Having daiquiris dark rum and cardamom, cardamom simple syrup and a little bit of fresh lime. Cheers. Thats delightful. Thats delicious. Isnt that good . Thats a way to start the day. Oh, yes. So, i heard a little bird told me that your happy place, your zen place is the Grocery Store . It is. I love well, of course in new york, you know, some of the Grocery Stores are smaller unless you have the patience to go to some of these larger places on the outskirts. I dont. And im pushing through the Grocery Store, just because theres so many possibilities. cause i love to cook. Yeah. So i just kind of love it. But when i get there, people sometimes, like are a little starstuck, a little bit. And i just sort of freeze and im like hi, its me. Its really weird. Well, your life must have really changed since kimmy schmidt because like, now, that show became such a hit. Yeah. And you were, sort of, the breakout star of it, so to speak. Yeah, i think there things are different. I usually my favorite store to go to other than the Grocery Store is the 99 cent store. cause you can make whole meals in the 99 cent store. On a fierce budget. And i was like, oh, i can go to that store and not dress up. And like not have to worry about trying to look starry, whatever that means. And im thinking, this guy doesnt know who i am, the person behind the cashier or whatever. And i get there, hes like ringing me up and hes like, kimmy schmidt. And im like, no, Titus Andromedon. But yes, im on kimmy schmidt. Now, the first i ever heard of you, was on broadway. You were you started the lead role you originated the role of sebastian in the Little Mermaid on broadway. [ applause ] yes, i did. I was there, opening night. Really . I was. Yes, i have lots of friends who work for the disney theatrics. Oh, right on. So, i saw you in that costume doing your thing. You were amazing. [ applause ] sweating bullets. Sweating bullets. But i wanted to ask you so, you come from a small town in georgia, right . Thats correct. So, where did this love of broadway come from . Well, thats a good question. It sort of morphed i guess out of the church. My mom sang, and so i was directing the choir at a very young age. This little, you know, 12, 13yearold boy telling all these adults what to do. So, you can imagine how that goes over in the south. [ laughter ] and then, i had wonderful music teachers in grade school. And we would do these little random music reviews. And they would sort of use existing songs kind of, like, a jukebox musical set to a fairy tale. And i just listened to the reciprocity from the audience it just, sort of the bug hit me, you know . Yeah, at a young age. Yeah. [ applause ] so obviously, growing up in the south, you must be a fan of Southern Food. Yes, i am. Like our miss carla. Of course. Where are you from . Nashville, tennessee. Home of the grand ole opry. [ laughter ] oh. Oh, yeah. [ laughter ] what would be your favorite Southern Food . Oh, god. Well, my mom makes the absolute best Fried Chicken and fried fish. And recently, i made fried ribs. What . What . I know. I never had fried ribs. I heard theyre good. Me neither. We were going to grill some ribs and fry some chicken. I just thought, what would this taste like, if i fried a rib . Let me tell you [ cheers ] get into it. It was so good. So good. All right, were going to have to do that in the show in a few days. Yeah. So, i have to go back to kimmy schmidt for a second. Because i heard that also tina fey basically wrote your part of Titus Andromedon for Tituss Burgess, you. [ applause ] like, with you in mind. [ applause ] thats kind of dude, thats amazing. Thats what they tell me. You know, i wasnt in the writer room, but she she said she wrote it with me in mind. And that kind of stuff just doesnt happen in hollywood anymore, you know . Yeah. Like, gone are the days where you give someone a star vehicle, who the rest of the world doesnt know yet. And so, im just forever indebted to that woman. [ cheers and applause ] i love it. I mean, shes tina freakin fey for crying out loud. Do you want to stick around . I have something that might go really well with these daiquiris. Im thinking about pineapples foster. That was our guest, the spectacular star of Unbreakable Kimmy Schmidt, Tituss Burgess. So, we have to explain what was happening in that, so, youre in season three now of unbreakable, and in season two, your character went off to be a performer in a cruise ship. Correct, he and mikey had just gotten into a relationship, and, you know, new relationships are fragile, so he didnt want to go, but mike was like, no, you should go, you should go. So, titus goes, and in true Titus Andromedon fashion, it goes horribly awry, and here in season three, he literally washes ashore no idea what happened or what went on, but hes keeping a big old secret. Okay. And it has to do with Dionne Warwick. With Dionne Warwick . [ applause ] and also, theres a whole beyonce lemonade thing happening this season yes. So, was this okay, like that. Oh, what . I just had to show that clip. Thats awesome. Oh, my god. What . [ laughter ] thats awesome. Should i . Yeah. So he comes back and finds his boyfriend having some fun with this other guy and it sends him reeling and the only thing he can think to do is lemonade as a verb. He did this whole homage to beyonce, it was really fun. Youre hilarious, and i think Unbreakable Kimmy Schmidt has more funny packed per minute than any other show on tv. Its like, literally, jokes are flying. Yeah, well most of the jokes go over my head. Do they really . Yeah, i have to read the script three or four times like, what are they talking about . I dont get it. Do you want to make some pineapple foster . I would love it. [ cheers and applause ] so the first thing were going to do is, in this pan, were going to grill some pound cake that we made just putting a little butter on each side. Okay. And then, were just going to throw that into this pan. Well do a couple pieces of that, but here i want you to make the fosters sauce so youre going to use a half a stick of butter half a stick of butter, so its really low cal [ light laughter ] and then some brown sugar oh, yes. Stir that all together for me. All the butter. Little bit of cinnamon, and a little bit of nutmeg, of course. That smells so good. Right . And then, were going to add some rum to this thats the most important ingredient, right . Because its the talent show day here on the chew, were going to light this sucker on fire. I heard. [ cheers and applause ] so, would you ever return to broadway . Of course i would thats my first love, when i first got to new york [ applause ] i want to see it i want more of you. Thats so kind. I had no aspirations to be on tv, so, after guys dolls closed, i told my team, i think theres Something Else im supposed to be doing for awhile, and blah blah blah, and fate happened that i would be so lucky as to work with tina fey, and i bought the rights to the preachers wife, the movie that Whitney Houston starred in. Oh, yeah, yeah, yeah. And so, im writing an original score and lyrics for that and is writing the book, so that might reach broadway before i do. Wow, thatll be incredible. Okay, here we go were going to add our dark rum, about a half a cup of dark rum, and then do you want to do the honors of setting it on fire . All right, ready and woohoo [ cheers and applause ] yeah i love it i dont know how to tell you this clinton, way to jump behind him and take one for the team [ laughter ] it all happened so fast. And your hair burned off. Sorry about that. So, were going to dig into this dessert, were going to pour it over the pound cake, more fun with tituss when we come back. Its smelling really good so good we added fresh pineapple and we have butter and brown sugar and cinnamon and nutmeg and rum and fire thank you for providing distance between these [ laughs ] im a protective guest. Um, you know, tituss, you and i have something in common. What is that . We were both singing waiters on cruise ships. Well, i was a singing waiter. You werent a waiter. I wasnt a singing waiter, but i was on a cruise ship and i sang. Was that Rosie Odonnells cruise ship . That was Rosie Odonnells cruise ship. She had the rosie cruise back in the day. But i am not a fan of performing. Well, im claustrophobic, so i feel like im trapped at sea. But also, like, the way the ebb and flow of the waves or whatever when youre, like, trying to perform, youll be singing i dream a dream and [ screams ] [ laughs ] so not necessarily something you want to do. Not something i want to deal with. Okay, here we go. All right, a little you want some . Yeah, ill take a little ice cream on there too. All right, so, we have some grilled pound cake, were going to top this with a little vanilla ice cream. This is so not bad, clinton. Its so not bad . Its so delicious. [ laughs ] oh, my god. I know thats one of them. Okay. But we thought it might be fun, if you could elevate some of our recipes on our show with a little game of musical menu. That will let you know whats your next destination is. All right, so this is my task . Heres your first destination. These people would literally bend over backwards for their lunch. St. Marks place between second and third. This is it. Go scoot on, baby ciao [ gong sound ] heavy your heels into the mat. And pick up on your thigh muscles. Delivery . Yes come on in yes, were working up quite the appetite in here. Were going to enjoy this pizza after class. Before i give you your next clue, were going to do some yoga. [ record scratch ] so youre just going to stand on your right foot. Pick up your left foot. Place it on the inside of your right left. This is really good for your muscles. Im going to lean on you a little bit. [ laughter ] can you grab your foot . Yes. Yes look at that. Look how flexible. Kick your left heel out towards the front of the room. And then let it go. Im totally shocked that ron carters in the room with me. I dont know what to say. I think you made the cut. All right. Heres your next clue. All right. Great scott, youve got a room full of hungry people waiting for you. A pizza lunch was number one on the meeting agenda. Its a pleasure to meet you. Im pretty good at pizza but i delivered to ron carter so im taking a little break. Im not going to make my half hour unless i can deliver these pizzas in less than six minutes. Im here for Conference Room three b. Head up to the third floor. All right, one minute. Down the hall to the left. Thank you very much theres a bunch of people. Pizza delivery. Is this 3b . Finally what took you so long . Is it your first day on the job . What are you doing here . Get the pizza in here they told me i have 30 minutes, what is this . Well, its your birthday party. [ laughter ] [ applause ] what are you doing here . Im here because i love you. Oh, well, thats a fantastic story. I crown myself as the victor of this particular challenge. 30 minutes, pizza delivery boy. I can do it chew fans. [ cheers and applause ] there you have it. That was great. That was a lot of fun. There really needs to be a video game of you on the that would be a lot of fun, wouldnt it . Kim kardashian game, the mario batali pizza delivery game, i love it. It was a lot of fun, ive got to say, like, i dont think our crew knew how much i love ron carter. So when i walked in there and theres ron carter, its just like, oh my god. You guys are really organized. It was so fantastic and if that feat wasnt enough for todays talent challenge, ive got one final trick up my sleeve. For my next act, im going to serve up some magic for your taste buds and transform pizza dough into pasta [ cheers and applause ] im going to make some soft shell crab falsi testaroli with tomato basil sauce. And its as simple as this. Ive got some pizza dough just like the ones that we use for the pizzas i delivered. Daph, if you could just roll that a little bit. And then cook it on whats called a testo. This is a traditional pasta to mazzacorati. Also up and along the border of ligoria, where they take a dough like this, maybe a little bit wetter, and they cook it almost like a crepe. Then they set it, then they cut it into pieces. And then they toss it in the water and dress it in anything from parmesanreggiano and a little bit of basil almost like a pesto. To like a light tomato sauce like im going to make right here. Awesome. So lets start like this. A little extra virgin olive oil. Dry on the stick . Dry on the thing right there. Im going to take a shallot thats been chopped up. Im going to take a little garlic. And im going to chop that up right there. Im going to throw that in. Im going to toss like so. Then im going to take some cherry tomatoes that are peeled. That are one of my favorite things. And im just going to squeeze them just a little bit. Watch your jacket there, daph. I got it, i got it. [ laughter ] were good. And then you take fresh soft shell crab. Yes in season right now. Im so excited. Now alls i did is i had them cleaned by my fishmonger. And i tossed them in like this. I dont season them until the end because were really not sure how briny they are. Soft shell crabs, of course, if its a really dry time of the year and the water gets a little saltier, they need less. But generally, they tend to be kind of on the salty side so i like running it over. When we come back im going to take it, im going to cut it into little pieces, toss it in the water, cook it for a second. Toss it with this. The magic will continue when we come back. Stay with us. Now, im in the middle of my final act, making pasta out of this pizza dough. And it was originally called testaroli because its actually cooked on that testa, which is that kind of a griddle thing. And as i said, it was traditional to ligoria and macerata where they serve it all over every town in that region, even as a breakfast dish. And what were going to do is were gonna take it, and were gonna take that kind of cooked pizza dough and throw in the pasta water, which ive seasoned to the salinity of the sea. Thank you very much. Lake. Thats right, the lake. Symon, you just dont get it, do you . Symon, you even grew up near lake erie. Dont you recognize it was unsalted, like shark free . I do. All right, so, then we do is daphnes gonna cut up just a little bit of basil and parsley. And what ive done is ive taken some finely ground breadcrumbs and ive toasted them to a deep, dark golden brown in extra virgin olive oil, so its delicious and flavorful. Because this is already cooked, all im really kind of doing is kind of soaking it in the water. Can i ask you a question, though . Yeah . With all the pasta they have and pizza being its own thing, why dont they ever soak pizza dough . This isnt soaked, this is a traditional dish. I know, but why . Because like theyre poor. Leftovers. This is the leftovers. You have leftover grain, you have leftover dough, you have whatever you could do. And the culture of the great dishes of italy are the cucina pobeda come from the fact that you didnt have much and you had to make something happen. This is leftovers redone though . No, no. They make this originally. They made this dough originally and then they realized well, we have a little bit of a leftover kind of a crepey thing. Lets see if we can make it into Something Else, so then theyd cook it the next day. Just like that. Keep in mind, raviolis is the same thing. Ravioli really started as a way to use up just a little bit of meat that couldnt make it for another meal. Right. So, they put it inside stuff. The italians are infinitely crafty. I love it. [ cheers and applause ] all right, so, then we go like this. Oh. Right . And i kind of think youre getting the idea. Then you take these toasty breadcrumbs, and lets take a taste, daph. All right. Tongs. Portion. Thank you. Soft shell crab. Thank you. Testaroli. Thank you so much. We think were looking good. This is gonna be hot. Ill warn you now. But, that shouldnt slow you down, daph, because youre just that zealous. What do you think . Mm. [ cheers and applause ] wow. Isnt it crazy . Very delicious, but really interesting. I love that texture. It reminds you of im sorry, go ahead. No, no. Go ahead. I was gonna say the testaroli reminds me of that part of the pizza that gets really saturated with pasta sauce and its a little bit mushy, but still a little bit firm. Totally. And soft shell crab is fried all the time. This is such a light and you can actually really taste the crab in this. Oh, gosh. Okay. [ cheers and applause ] this is really good, you guys. Mario, look what i found in my pocket, one final delivery request. Oh, great. What does it say . A delivery boys day is never done. [ cheers and applause ] oh, and also 100 okay [ cheers ] first up, is a nurse and mom from North Carolina, kinnari welcome to the show, tell us what youve got for us in the kitchen. [ applause ] thank you hi, guys so, once you try my ginger hack, youll never go back [ laughter ] the trick is, to freeze it and then whenever you want some grated ginger, just pop it out of the freezer, grate it up, and then youll have it ready for whatever you need. [ cheers and applause ] i love that. So, peel it, freeze it, never have ginger go bad again. Genius exactly. Okay, up next weve got mom of two from utah, natalie what is your easy tip . [ applause ] hardboiled eggs wre so hard for me to peel, so, ive learned this new trick. You crack it straight out of the boiling water, you put it into ice cold water. Let it completely cool. And then, you peel it while its in the cold water. And then, you have a perfectly peeled egg. Awesome. I am totally going to try that. All right, and finally, from North Carolina a woman who learned her way around the kitchen from her mom and her grandma ann, sorry, please give us your trick. [ laughter ] yeah, so, when life gives you lemons, make sure you use every single drop. I love to start my mornings with a warm cup of lemon honey water. But, i hate when theres those dried little pieces by the end of the week. So, my tip is to take the lemon, roll it out, pop a skewer in it. And when you pull it out, you can squeeze out as many drops as you want [ cheers and applause ] so smart very good okay, judges, this is the hard part. Quickly, write down the number of the contestant you think won. [ cheers and applause ] one, two, or three. And on my count, please raise your paddles is it one . Is it two . Is it three . Go [ cheers and applause ] come on, come on, what do we have . What do we have . [ cheers and applause ] you won thats genius great job you win the chew trophy. Of course, heres your trophy and 100 congratulations. And, weve got chew books for everybody no one goes home empty handed from the chew congratulations [ cheers and applause ] such smart tips. I love these tips, i want to use them all. I know they were all so good its a hard thing, you know . cause you cut your lemon open and then it really does get all dry. You cant really use it again. But, you can keep poking that thing, like, a couple of times. And, its like a stress ball i think its great. Yeah, and even when you i think you only have to poke it once [ laughter ] you just [ laughter ] i feel like all of these things happen. Either, like the egg that doesnt peel properly looks all mangled. But also ginger, especially organic, it goes bad so fast. Yeah you peel it, you freeze it, you never have to suffer with dried ginger ever again. I love it. Theyre all good. All very usable. Is there 100 for each of them . Mario .
