By the end of the week we could be back in the low 40s. Frank, well, it is time to get cooking. Chef andrew is with us this morning with a very colorful spread. What do you have for us . Today well make a fresh vegetable and sautee with a ginger sauce. Perfect for the new years just to get a lot of different vegetables in your diet and try out something a little well just start off. A Little Olive Oil in our hot sautee pan. Throw in some onions. Then some red peppers. Throw those in for me. Absolutely. When youre maybing a sautee you just want tongue about the vegetables that you have. Vegetables that take a little longer to cook, put those in at the beginning and just keep that in mind while youre making the dish. This will come together pretty quick. If you have all your vegetables cut up and ready to go we should be on the right track. Preparation tends to be key like you dont want these sitting in the pan while youre cutting up the broccoli. Yes. Fresh broccoli. I like to have my broccoli have a little bit of bites or crunch to it. Were putting that in about midway from the sautee so well have nice texture at the end. So snow peas. Mushrooms, zuccini squash, shredded carrots. From a preparation standpoint you can buy your carrots already shredded up. Saves a little time. That is the Biggest Press in all this is chopping the vegetables and preparing them. Yes. Otherwise its a quick meal. Definitely. Then the sauce that were going to use, you can, you know, buy a premade sauce if youd like. I made one up here. Its got some fresh juice, rice vinegar, a little honey. Lots of ginger. Garlic, cilantro. And then typically they have peanuts or Peanut Butter in there but we did Almond Butter instead. Simple but healthier. Almonds have good fats in there. Theyve got, you know, a little healthier than peanuts. Mix it up and try something different. Preference. All in preference. All right. This is pretty quick as well. Yes. So you can buy this precooked if you like. In the sautee or the sauce pot like rice. Just with low water, low Sodium Chicken stock. As you mentioned rice, this is a great substitute. And it has protein in it. Yes. You know, its gluten free. A lot of good fiber. A lot of the good amino acids in there. Like you said, the protein as well which is pretty phenomenal for a grain to have that much protein. Were just going to throw that right in here. All right. Typically you serve your grain under the vegetables but well toss it all together. A one pot type meal here. It does smell great. Youve got those really nice colors in there. Throw in just a little bit of the sauce. You can, you know, depending how much sauce youd like, do a little less, a little more. Just totally up to your preference. Sort of like you can kick up the heat level a notch again for taste right . Definitely. Get this recipe under Meal Solutions or follow me on twitter chef andrew and well have it posted right there. Well also have it on kcci. Com. What are you going to be cooking up next week . Dont give it all away though. Next week well go to a slow cooker type recipe. Something you can have going all day when youre at work and come home and dinner is ready. Perfect. Nothing is better than when you come home and it smells delicious. For sure.
