I tried to have something that would make it so it's easy for everyone the secrets to climb making I think the 1st one which is the most important in Pa is to keep yourself chilled keep everything chilled to specially yourself and that's kind of a good philosophy for life also don't you think you will even keep yourself to chill like keep the air conditioning on when you're making a pirate put ice on your fingers what do you do one of the things that we don't realize is that our environment. That is important is so that the the fact that doing. Not get too soft when you're making the pie so if your if your hands are in your high ninety's which is normal the. Fat butter starts getting soft at 59 degrees so if you have 98 degree hand that affects things so well here's a secret that is really an easy one and especially in hot weather freezer butter and great so then you don't have to worry about that at all so freezer butter the likelihood one Friesan grated I like that so then if you had temperature all the time so these are the kind of secrets you get in there and that makes the crust better is that true. Well it makes it so that that fat which is not a 4 letter word we all need fat for our brains good fats that is so that it doesn't coat every single piece of flour this way you kind of if you want to smush that fat into the dough but you don't want it so that it covers every single piece of flour Ok so I love this here now now let's talk about the fillings how what's the secret to making fabulous fillings gotta be fresh right of these canned filling sometimes what do you do I use fresh fruit when ever possible and the most important thing when you're getting fruit is to taste it it needs to be pie worthy fruit it because I was once I were the flavor is number one is that really for absolutely flavor I love to follow the little kids around the farmer's market and if they're taking 5 tastes of stuffing that's 1st of all I'm interested him I love this I love David Dermot is our guest see is the pie Whisperer it's National Pie Day 3.1414 But people eat pies on this day and she has a book out called art of pie the Practical Guide to homemade crust fillings in life and not too sweet a fruit when I mention cherry pie Some people went into sweet am I right. Well I think any time a pi is around it's a good day so I think that there are 3 quick rules to life that I practice through Pi making as I mentioned one is to keep everything chilled especially yourself Number 2 is to keep your boundaries you don't want all the the crust going over the edge of the pie pan and number 3 is to vent and I think pie making is a wonderful and appropriate way to vent about. His life if you go through why did you keep children so good you saw the body keep still if you keep your boundaries with people and if you vent you you vent when you have to you're in good shape so you the best your kid mage around lovin you more each day and I give us. A quarter of this a recipe in your book is called the best peach pie in the world lay it on is why is it the ballad would it do Ok so you're going to need approximately 2 pounds of the best sweet right peaches that you can get and my favorite are some I love Cal red peaches California count red peaches when they're in season those are my favorites then taste the peaches for how much sugar you're going to put in if they're really sweet you might not even need to put any sugar in maybe a quarter cup maybe a half a cup you're going to taste and then take a little grazing of nutmeg until you can just now when you lean down to the bowl a little squeeze the freshly a fresh lemon squeeze one of my favorite things to do is a little a little bit of Quantrill or another orange the core is awfully nice in there maybe 2 to 3 tablespoons can live. Happily salt to a pinch of salt and then you'll need something there and you could put a combination of flour and the quick look in tapioca and then mix it up take a taste if you like it your ready to go and or you can adjust your. You want a little more Quantrill if you want a little more sugar that's when you do it and then you put it into a rolled up high dough make a lovely top with them we will then song or you could do a Latin cross and been out for 25 for 20 minutes and then turn it down to 375 and bake until 40 minutes or until you see those beautiful bubbles coming out of you're right down there and you listen to the sizzle want. Pies. Pies that's what you hear if you put your ear right next to the pot that's the licious and this is all something funny you feel when you do this by the way like you've really created something don't you when you put together by I mean it's a fabulous dessert that people are going to go on are over and say did you buy this no I made it it's a it's a big difference correct absolutely everyone when you come to somebody's home and you come in they say Oh. For me personally I was already into. Taking music and style sort of coming out of high school and coming into college and reading books like the. I was able to you know sort of self-taught myself than cocktails at the end of college and then just being in New York you know so exposed to some of the oh yeah mazing bars that were coming at that time especially in 2008 that was sort of the year that punk broke you know. Many many class cocktail bars you know where you just starting right where in there like you know 1st or 2nd year so it's kind of the craze right now are we going back to Singapore slings us to motss by the way our koalas flavored cocktail we're going back to that kind of stuff now I mean Don the Beachcomber was like the place to go and they close years ago but they had cocktail mixes and everything that cocktail is really coming back now well I would say that. I think what the court correction tread because I think what he talked to were able to after progress is actually greater the crap that God so he brought to the mix ology crown back and so it kind of comes and goes in waves and so those cocktails are just always been embedded in the cocktail society and you've made the absolute best Tiki cocktails correct. There is a green chartreuse well. So what's a give us the blend here so I can try to throw one together for St Paddy's Day Yeah the Irish whiskey I would recommend doing something like John Powers or if you want to splurge a little bit Redbreast which is a hot Bill Ayers.
