Go to the table. Then it is round, you cant do it on air. Right between the leg and the breast and it opens up to the joints, and in the leg, the next joint and you separate the drum and the 5. Then go rest on a platter. This is the side and take the bone out of the side on the inside. Then again you cut that joint off because you go through the joints. And the wing i take that off. You open up this space to work and do it. Now you got the breast. In one whole piece and right in the middle is the bone so you want to go to one side of it and start to open it up. You are not there yet. This, this boat is rounded so you are using the tip of a knife, 5 or 6 inch knife and as you pull it a little bit you are scraping the bone as it goes so it will come off in one nice piece. Rob right up against the breast bone. That enables you to put it down followed. This is the grain part. Look at the way the lines are running and cut across that and make your slice. Turn it to your knife side so you can squeeze a little bit and go against the grain, according to a native and in, too thin and it will dry when you bring it to the table. Then it is an actual bite and it enables you to slice up against the grain as it should be which is why it is tender. Rob you still get gravy. Jillian why do you want to go against the grain or with the grain . We dont have cutting, we have that if you shorten those fibers that is why it seems so tender.
