All the way from the rich farmlands of california to the waters of the chesapeake, and incidentally for our first course, we are serving our famous maryland crab, which is actually from cambridge, maryland, which is accented with an asian hybrid of citrus, a cross between lime and kumquat. It is also garnished with root festivals, sweet potatoes, yams. For the second course, we want to celebrate summer. We are highlighting local tomatoes from farms in ohio and are also marrying this with some wonderful asian flavors, which is the green papaya and green mango pickle.
