Have to be loved by you the week here on B.B.C. 3 Ken is ready with me. Today monkfish with butternut squash Piri homemade. Spicy sausage with the addition of the lovely spicy pork and great cast to dessert wrapped. In honey coming up. With baked pizza dough. And a Sunday morning hash which is where we're headed right now something I love to make with my children left over vegetables and in the fridge fried up in a pan potatoes whatever you've got to hand and with a crispy fried egg in my kitchen there are 2 interchangeable ways of making these left over. In your fridge literally the left over cooked vegetables from your Sunday roast or do a mix of the 2 armies in the leftover vet from the base of my fridge I've got cool Jets I've got leaks I've got potatoes as well political it can all top it with the all important fried egg this really is a hangover cure it's Sunday morning at mid-morning brunch is a great way of getting to the bottom of what you've got left in your fridge and it's quite a high heat. Because I'm going to so take the potatoes I'm cutting them really small I'm looking at about half a centimeter square maybe even a little bit less Good luck of olive oil goes in that pan is nice and hot. We want these potatoes to cook relatively quickly in they go. Ideally you want them to take on some color. And I'm making a non-vegetarian version of this you can of course I mean the bacon I'm about to put it in. Again chop it nice and finally I like to remove the fat is no reason for it to be in there at the end with your potatoes. That bacon is going to crisp up with the potatoes and that color of flavor to them as well. Just as a potato start to soften up and take that color and slice instantly shut them into the pad. And just keeps a tag. Followed by the final 2 soft vegetables some took cause I'm doing this all pretty costly it doesn't have to be pretty especially if you happen to be hung over which I've not right now the technique remains the same. And I've also got a whole for let David or red pepper that's going to slice its way in and let some color to the mix. The veggies doing really well time to season it a little bit of so. An attentive black pepper. Finally some tomatoes you don't know what these 2 can disintegrate you want them to stay fairly solid So you're just looking to take the edge off the I've got 5 little vine tomatoes put them into the pan. And at this point turn the heat right down and just let the tomatoes soften up another frying pan another high time to fry the egg when I fry an egg I like to use quite a bit of oil it's probably not the healthiest option but it really does it really does crisp it up nicely and quickly and keep that yolk really runny crack in your egg. And that fried nice and quickly as I say by putting on a hot he in a lot of oil it's sizzling up it's crisping up it means that the white will cook quickly and I can leave the yolk in peace and you'll be loving your money that's really important when you lay on the hash. And that's ready to eat off. Take the egg off the hate. Take a bow. Plate up the vegetables. I say play it up I mean check the visuals in turbo . The potatoes are taken my lovely color the tomatoes It just starting to pop is exactly where I wanted them all the rest of the veggies nice and soft and let's finish it. With our Friday which is spitting at me in the patent. And I've got a tiny bit. Flatly passively left over in the fridge for a chopped up sprinkled on the top and that is ready to go hangover cure would come earlier with the amount of wine your drinks though you might need one of those after this pretty good for you hangover type but now your to your to your wires of years ago it was my hangovers get get bad Barmer I'm a I'm a mixer and I you know I'll start off a little beer right now a little glass of wine right now maybe it wouldn't sonic right in the ROMs come out right it's bad levels simply diminishing very very quickly and I'm not feeling any great and I love also passion no doubt I was out having a basically tomorrow morning your meet your needs are left over hash C.B.C. Don't care you case last 3 counties radio if you want to today's recipes are there be uploaded there in due course in it but you can then scroll back through the weeks programs of previous weeks and see all of the recipes that we do on the weekend kitchen they're all delicious they will cook at home and they're there for you to enjoy pending that going to join in the restaurants that we feature in the program that's how it works for you either you're the near enough to the restaurants can enjoy them yourself or you can make the recipes at home or better still you can D. Move move move move move move move. Move move move. Move move in news. To me cause. Brave. Is the should absolutely. 0 the song the street. The Congress Good to be good luck. Because you see the. Club didn't play. Love to slip. Loose to play with kids. To Concrete and Clay Randy Edelman on the weekend kitchen here on B.B.C. 3 Counties radio we've got a mellow and Yanis. Facing off Greece verses Greece vs Italy it's going very well including a very nice Kenty classic overcome bellows kindly provided just for the hosts to be slightly lubricated while presenting the radio show let's move on to Younis which is which is beef stew but Greek style and yes the key here the important part is the long marinade isn't it for the beef brisket the long marinade in red wine so what is it 24 hours you leave in the marinate before. Your beef brisket I mean what do you pour into that olive oil red wine vinegar Berry live purple and just leave it sit for 24 hours. For $23.00 times those for the 4 I would use that and of course the red wine is already in effect cooking the. Writing it down is breaking down taking out the SIM use and making it nice and tender and then with the onions there's kind of an interesting twist here because America is saying a couple of hours before you get ready to cook the beef in the marinate you boil them is that right you buy them yes you know you know about us for a couple of hours. And then let leave them sit for hours I guess that's that's you if you put them in at the star and slow cook at The Onion just going to disintegrate Yeah so I guess the onion is such a big part of that dish that you want to have the comps of onion with the meat so it's kind of you leave them to rest for a while and then put it will also by the new taking away the acidity is what you're going to be extra sweet and say I can see I can see that's so that you can take them out and then and then we have to correct me if I'm wrong and if we don't have to rebuild the dish so we fry the onions seal the beef brisket and then what happens to all the wine and the marinate. Everything straight over the top and then just slow cooking slow cooking for 2 hours OK and then and then the big press kit which by this point has already had a strong marinated in is and it's had a chance to settle and then you get this it's very frequent isn't it Cinnamon I think just lifts the whole dish the cinnamon is you have never had that in me before yet he says is cinnamon a very very classic spice used in Greek Yes it is because often you associate cinnamon perhaps made with dessert is a. Sin with Apple you're supposed to use it in a lot to use in Turkish food as well cinnamon and that type of a little bit I think so yeah. It gives it gives it a sweet this is that you know is this stiff odd I love I love this. Part is I thought what does it mean in what is a direct translation father. Before us is the father on his own right and then you can have because the father is the father even mushrooms the father to go to vegetarian Jeremy. This is about is this is the follow through with Orleans tomato you know garlic. Basically that's the more the main the I'm just this just it up with every last time I mikes to father. But it is vegetables and so is potato peas onion. Tomato. And make funny enough for whole boiled egg you so you cook the you quickly it was cook in so it just cooks in it but it is lovely but you need to look up whole life bread with my just and would we serve this we mashed potatoes with chips what would we service with you 7 with chips which is I think a perfect match here before. You know it were a must for the US or even Rice you your chips the border said a They've got seating on them what. Looks like to me that they've got pretty care and some community college Libya is that is that a traditional way of serving chips in Greece and. I would say this just. Yank it but I suspect they come out of this is this is not this is not similar to a traditional British beef stew it's got lots of different sweetness and. It's I mean obviously the make is nice and soft it's lovely when you eat it you know it's just slow cooked. Meat dish but you know like you said I think the young un and the cinnamon it's just it's quite sweet it's quite fragrant Thai So describe it slightly sweet and sour because it's got a little a little tiny ness of the vinegar the sweetness of the onions and it just it's just very tasty very very very very emotional because well with a red one. With or with a lovely. Tesco that we've only very very slowly broken the back of very very gently a tiny tiny weeny bit so yes in summary this is very simple marinate the beef overnight in the red wine in the bay leaf and a little touch of red wine vinegar the next day boil the onions leave interest for a couple of hours or fry them over seal the beef chuck everything back in and just cook it for 2 hours and would be perfect for it. In a slow cooker as well just in the morning even the slow cook for as would be delicious I love great food almost as much as I love Italian food almost as much as I love Greek food how am I doing here I'm trying to stay very centered on the middle of the fence in this week's kitchen lazer Italian dishes loads of Greek dishes as well as some very lovely feeding cleaning this. Fish to talk with pizza dough on its way which I'm very intrigued by just going to cut into it I was going to happen in good he says something underneath the pizza dough topping actions we hold our seafood fingers crossed it is the week B.B.C. 3 counties ready Taras here with the people from 1 o'clock this intriguing fish to dish on its way next. John the song Let me just comment on this glass of red wine it's the weekend kitchen. With me and that couple we've got to cut a melody Georgie one of the brothers this 3 of them they run to and to Kitty in. As well he's going to do number 4. At the moment with the 3 So we'll see we'll work we're working towards it perhaps it is the thing you see is the football analogy with 3 brothers 3 restaurants you just man to man marking if you get off then it's going to have to go because you will be out the window you'll be split when you have 3 brothers 4. Works well with 3 Yeah and I think with 4 it could go completely wrong it could be great that I'll get another brother here which is provide fancy not. Because I could run a restaurant it's easy I see this weekend we go on this program you don't have to work very hard to of course check your Yannis packet accuracy is the owner of the anchor in Phil's Worth where he'll serve you in his traditional English pub with some very very traditional Greek food as well today we've had monkfish wrapped in Parma ham with butternut squash puree Homemade to see key homeless and had a mass a lot of. Spicy sausage with their indoor yet so spicy meatballs within Do you have . Greek custard wrapped in philo pastry and drizzled in honey we've got a traditional Greek salad and baked fetid cheese on its way we've had the beef brisket and now has to catch. Fish June. Allegedly OK because to be quite honest we come early we have no idea it's sat here in Italy . A lovely sort of black eye and dish and it's topped with what were some soft pieces you use your usual pizza day for us or use the pizzas we bring out to the customer like that so yes there's this what's inside it it's like a little parcel with surprise and of course the day will seal in all the juices and all the steam so if there is food under there then. It would taste delicious in that show if we had to make this at home I mean actually you can just make the fish to part of it but it is just you can't you could use a simple bread dough 500 grams of flour and 7 grams of decent amount of water a discreet simple but yes I mean. Literally Normally it's found without the pizza dough so you would just mop up that are you just being clever which is being clever has found just been so which is not what we said but what you took just tap into the top there so and then and then what you just rolled back and we were going to cut we're going to cut the. And then I said then I'm going to get my fork and see the rolls steam is coming at you when I'm going to roll back the and there is food and then look at that there is actually pierced my knife on the edge and there you go and then you've got this well and you leave the knife in there like that leave the knife in the law Good luck with health and. There's only one slice to handle it yeah no OK that wouldn't be a good idea and I can see seafood you can see right there what is the catch. Is is basically some clams some squid some muscle some prawns and some scallops and it's basically pan fry all that. With a laser serve while you're talking and yes indeed with a ladle of tomato sauce Yeah so we're back to you like to the to say that it's tomato sauce has got so many Pentagon yet there we go look at a solar cell is muscle tissue perfectly open of course make sure your muscles are open before you eat them or else you could be spending the night where you could just be spending the night never going to be a good look that Sigourney saying see you paraphrasing say squid square scallops prawns. Mussels ladle of tomato sauce some chili in there obviously you've already got garlic in this also had a saute that put it in it's a gene in the. Bradley Turing's call to rain Yeah yeah well no no. It's called a dish it's called a dish yes. I'm happy here we dish here so you can put it all in there so it's already cooked so you know you see food already cooked is a really easy and really quick dish to make his own as you want the tomato sauce and you've got your your You've got your dough you're basically recommending that we all make about this tomato sauce and freeze it pretty much would you do it in your own house. I have done it I have to of Might someone just just leave it you said you like quadruple quantities you back it up in small in small packets and you're ready to go with it here. So you've cited your shellfish in the tomato sauce you know bit of chili is that it which really that's it so it's already cooked it's all in there. It's a sort of $240.00 to $50.00 thread goes over the top. And then you're basically put in the oven for 6 minutes like minutes and then the important thing is they do need the bread to bake Yeah but you leave it once it's done you leave it to rest so that is workable so you complete it back and it needs to be nice and soft so you allows you to peel it back and obviously you mop up the lovely juice with the dogs and it says the lovely sharing quite dish quite Hoben Even though because you want the bread to cook you absolutely need it to cook your so just you know nice and hot for 6 to 8 minutes I love the I love the self serving bread dip it's good business because lots for example when you get a. Crust space for example and it was very frustrating to see you kind of want to eat the surprise because you actually discuss things that you don't see just but this is this is an eat everything. And it's really popular and it just is a bit weird so that we do it you know in the restaurant and it's you know when you when you peel the the dog back and the steam comes out and you see all this lovely shellfish it's really nice I have an idea like for next time you make your loaf of bread just make 10 percent more of the dough we stick in the freezer when you have to use default and know this divided country is going to come to you. Have your bread out and use that as a topping since it because this would only require it like a small bowl of bread is about time you. Really probably have a baps worth rather than it's actually. Yes we do so 240 grams of grams of the afterlife so. Make extra and then get out where you know when you're ready to repost just give us a call and I'm sure. I'm sure your use of diet which you know what they say that. I find I have absolutely no athletes or are used to I used to live in East London in Hackney and we had a wonderful pizzeria there and he would sell does I say to sell used to give it away just for a bit of funny detail you have some time I think out days pizza ovens outside in the garden is such a big thing. And we had people come inside how can we cannot buy 2020 balls at our feet and yet he said. And then and then their friends I get all this that I've worked with I've worked so hard on you know. Allow me to put in my piece of and then the local grocery where that takes a little bit longer so it will give them the right to have habits are by the way in the cells in a cup or it's got I kept in adverts this on Facebook. Piece of is it down to like 300 quid I mean it doesn't the days of a 2 gram pizza haven't. Gone yeah definitely what people do they just they just have it in the garden and a piece of twice a week you can cook somebody you can cook me you can cook roast dinners it now died in a piece well you're going to have business before you know it so that no one was going . Come to peach and yeah miss there's this lovely seafood stool with the bread topping it's a clever idea the bread because you've just used it to mop up the sources did you like the concept there when the sources of your the group of us were always in the sort of a place only that it is rude to leave the source and And what about the flavors of the Castro yes you do like be the muscles in the squid in the tomato sauce. So for there's always good seafood is always there it's a lovely dish has come and I really love it this would serve to witness if this is a shared This is a typical Sharon dish but to preallocate if you've got like a nice romantic evening I mean it's a lovely idea yeah my very last question though is it doesn't B. Doesn't it sort of all pop up a bit in the up and you need to pierce a hole in it or it just is not so it's in there long enough to you know it was just it was just come out. Just the the the secret is just to rest it I'll just sit back down just for 2 or 3 minutes because you need to have that workable so you can put it back lovely really really really nice and just a simple rolled over the top and serve with muscle squared. Tomorrow. We have plenty scallops and here I want to know you know whatever. It is that no no really no really really. Fine never really did bring the wine if you want the recipes go to bbc don't get it you can slash the 3 counties right it will finish off with that traditional greek salad in the baked fetta cheese with tomatoes peppers Oregon and all of all this is the weekend kitchen Sunday morning Sunday afternoons food festival B.B.C. 3 Counties radio that last issue on its way after the pretenders. Elaine. That is a move on to our very last day show our last dishes on the weekend kitchen this week we've had a Greek Fest an Italian fest 2 very very fine restaurants going head to head Italy versus Greek and if we were in terms of numbers of recipes about you because he's done a couple that. Kept his powder dry right until the end then there is going to go past you next time last minute 119 minutes after the big slugging match of purple so far today we had the monkfish wrapped in a with a butternut squash puree. That I was a lot of puppet in a pick and it is the meat balls with indoor spicy sausage got about a great cast a dessert Repton feel a pastry and does it in honey. Go that beautiful Tuscan fish stew topped with the baked pizza dough. Simply man aged 24 hours quickly so didn't cook for 2 hours something that was my recipe you can have any day of the week by the way if you want I will finish with. 2 ways with better baked fettuccine tomatoes peppers Garneau and olive oil now yes what I understand about Greek food is it's all about simplicity of flavors this is a simple as you can get so. Just talk me through what you've done here you've got your slice of fetter what you then put on top slice of bread or a slice of tomato. Spiced purpose OK. They're going to court I thought it was chilly and that is that the pattern still affects as well as chief Yes and it's not actually him there's definite kick your purse it's good olive oil in Oregon now and then so what you just layer those up in a baking tray and just bake it for 10 minutes and that's done I thought How simple is that Camilla really just easy just a just a game would you use that as a start maybe like a starter talk like us are softer you know and of course the beauty of fetter is the shape doesn't it yeah it doesn't go anywhere fast so you know I should have pointed out actually that you've cut the fetter lengthways in the cheese so you've got quite a big slab of fettuccine there at the to martyr is just melted on top. Of these chilies or these peppers what would it be. A lot. Of pain having that because that narrow the narrow green I think they've got more of a kick than we giving them credit for and then told me the Oregon I am a chili and bake and you say you say yeah I said this would just be a simple starter or even a lunch I would say is as soon starter you know now we couldn't do a program with loads of great food without doing a Greek salad and a Greek salad please is so ridiculously simple that it's again I saw Rick Stein day one of these on his program the other week as well he said all a Greek salad is chopped vegetables and a little bit of salt and I think a bit of Oregon it and that's it and that's all you need to do is that correct Yes Basically you have tomatoes cucumber. For to choose olives for the cheese are gone now but the most important thing on the Greek salad is the oil of oil OK Does it have to be Greek obviously yes yes order for it yes he has to become a. Great well it's gone off to drive is very good ass car. Has to be a good. Greek All of oil Yep and simply a case of drizzling the olive oil over the over the organic and serving I said there's no there's no vinegar there's no dressing it's just the classic ingredients put together since Salt. And olive oil went on a very similar and of course Carmel of the the the fetter itself is out in the saltiness so you don't need so on the here you've got in the fats already it takes all you would every meal have a Greek salad yes I think you should now know. If you're eating if you're back in Crete on the beautiful creation beaches you have in your grilled fish would you definitely have the Greeks out or yes the Greek salad is in the middle of the table for by the hour like in a big mound OK So you see everyone serving as they go and you simply wouldn't imagine a meal without the Greek salad. No it's quite it's quite the same I'm sure it's quite an Italian things well certainly where where we're from as well you know where you have a you know my mom who sat in here but he said this is the latest right now you have your past and you have your your your meat and potatoes but there'd be a big bowl of salad in the middle and exactly here and we would all wait I've been just out of here and the Oregon I was asked to be just one of the mining gradients in the in terms of in terms of great cooking in general what I've learned today is it's about very very simple flavors in any city it's simple flavors cooked well cooked I believe is what a good cook simply is not a pretentious for it is that no it's not know what you make of British food by now now you've been here for 15 years are there any dishes here that you've fallen in love with or do you still stick with your traditional Greek Fareed I would say I'm still stick with this really when your wife and she's she's she's the cook as well is she from Crete Yes She always been a cook. No. I just love cooking at home yet. Flavors of for this is just out of this planet so yeah all of this we love which also gave me the idea of starting the party restaurant of course well I would never do it without her name. War and Manuel angry in mind well why do you say that in Greek I mean really Manuela why with the greatest respect with why to create because create is such a magnificent island why why would you be here or not there. That's a long story OK. But there is reason to not be there. Just up and up we are here yet just carbon for circumstances where just our Yannis came out of prison for the people in. The island he then decided having having said his 28 years they said we will release you as long as you go and open a restaurant in bed for 2 days it was that. That happens in the any circumstances change and people just pure luck lot I lost out your different directions and exactly why don't you miss home. Of course but there were go after tomorrow Yeah well actually there be very very. Very very lucky to have you back with all of all of your refit this was never the fetter with the to me. It's I mean it's just simple honest Italian Yeah yeah I mean it's very very similar a lot a lot of this is a very similar lot to Herb's I think he uses a very very solid Agriculture's very similar here and there in the city this is very similar as we're still calling Mediterranean here of course the show will call it's called Roll all of today's recipes will be available at B.B.C. Don't cater U.K. Slash 3 counties radio we had monkfish wrapped in Parma ham we butternut squash here I.
