You know my Her 1st job met my husband was as you do it kind of took off from there so I moved up to Northumberland when I'd finished my education and he and I started the café together on Holy Island with the help of his parents so I'd always really been into baking I started off in the kitchen and he did a lot of travelling in Australia learnt a lot about coffee when he was out there so he was kind of the coffee side and I was the food side and then we've literally been doing that ever since so I think it was 2006 we started the café why am i still going to live on the island then at the moment we're not living on the island we did live on the island when we started up the cafe but because we've got a young family we need a little bit more space so we bought a house on the mainland but as soon as they're a little bit older well hoping to move back on to the island whether we find another house or whether we try and sort of find a way to live in the cafe or something like that but at the moment 2 children and small children in a car it's not like I do you know not a good idea well maybe not for your children it might be you know they love it I really love it does it take a while to be accepted into a community like Holy Island yes I guess from a point of view is you know it's a small community of people who live there for you know you out there you're absolutely right my mother in law she had a business before us on the island and in fact her mum had a business before her on the island RICE The family's been on the island but not living there for any long periods of time so I think we're still deemed the mainland the family connections been there Yeah exactly so how do you prepare for Christmas then Victoria Tell me about pilgrims coffee on Holy Island the 2 busiest times of the year is Easter and summer and then it really winds down for Christmas although it's still a lovely atmosphere we tend to sort of scale things down a bit we do indulge in sweet treats we don't do like a great deal of big lunches or anything made. People just coming over for hot chocolate and coffee and cake yeah that's right so you co-wrote a book recently didn't use well a taste of Holy Island so yeah tell us about some of the recipes in there and maybe some of the things that you would be as we head towards Christmas so we've actually split the book up into seasons for that very reason because we've tried to make the book seasonal in the aspect of produce but also seasonal with the atmosphere of the land the imagery but now it's well formed this is a very you know ingredients you've got then you actually go to the kitchen cupboard . So I use that one when I. When we move into winter there's a lot more indulgent recipes and there's a lot of use of cream chocolate sugar. It's what you're after isn't you're after a bit of a treat you're after well I'm nice and sweet and if you can treat yourself as you had towards Christmas when can you yeah I've got some sweet treats have just been. Coming in here what we got and he got chocolate brownie and I've got our most famous cake which is the perfect cake which we get regular requests for what's a cookbook kick so it looks a little bit like a kind of Flapjack Well yes yeah it's completely made up it was just when I ran out of ingredients in the kitchen one day and had to cobble together a flapjack so I chucked everything in that I had the Catholic cake was born and ever since it's been sort of a favorite the cafe and is that recipe in the IT IS Oh yeah absolutely we couldn't miss that it must be a lovely place actually I know obviously you've said that you don't necessarily live on Holy Island but actually to be on Holy Island is your porch Christmas I would imagine it's a really nice always beautiful most magical place it's lovely it's so nice in my opinion Winter's the nicest time of year to visit the island really the walks are virtually uninterrupted and it's the sun rises in the sunsets are amazing and if you're lucky enough to go when it's snowing it's just absolutely magical but it is yeah it's lovely How do you work that the caffeine around the tides and things like that yeah that's a bit of a tricky. And it was almost having that realising in front of you there was a vision of something that you know when you growing up as a kid. You have this image of what Christmas should be like yeah and it's snow on the ground it's beautiful lights in people's houses you could see the Christmas trees you know it's all beautifully decorated it was so peaceful and with the snow it was well it was even more peaceful so you just here than here nature luckily and it was by pure chance I had a phone with a camera on it and I took that round with me and started taking some pictures I took one of the castle in the snow which people then saw it and sort of said oh you know you should do something with this you really ought to and and 7 I go back and we gave it to friends obviously and then they said oh please make it into a Christmas card and so I did and then it just that interest just grew and grew and into doing sort of personal projects and then Victorian I sat together one day in the cafe and Victoria said as I was eating yet more I might love to do a cookbook and so I said Well look I really enjoy doing photographs I'm a visitor here yeah it's a privilege to be here and so I found out which I wanted to do is work was to find out live it more about the history of the prize steeped in history and it is and I've just scratched the surface by going in and talking to people looking through the archives newspapers and things and and just finding nice little stories around there about the island of because there is a feeling there's a wonderful feeling of when you're with their great the clock has stopped time has stood still we go back in time you don't want to have your mobile phone on you don't want to have access to the Internet you don't hear about all the things that are going on in the world so how many Christmas is would you say you'd spend there with the family that oh I spent most of my kids' young Christmases going up there saying about 77 or 8 Christmases are going up on New Year as well everyone just feels uplifted I don't know it's almost like feels refreshed really because you can't get involved with what's going on across on the mainland you can be special in the tides in that it's you know you are you are caught off early it's a lovely feeling I wish I had a gift of the English language enough to describe it because it is just so pure. Before so I try and take some photos to remember it by and hopefully if people see him in the book that's the whole point of it is then when people go away from the island and I maybe Saturday home on a cold wet miserable day somewhere that you pick up the book and have a look at it and go That was a nice trip you don't seem like stressed people the pair You seem very relaxed the pair of it's been a pleasure talking to you've got that kind of calm demeanor about you both. I have you got any tips for like a stress free Christmas whether it be on the island in a in a busy cafe or as a visit to May be my one piece of advice about a stress free Christmas if you're going to go somewhere like that is really do separate yourself from the 21st century just let time slow down we let time dictate what we do so much during an average working day and so nice just to be out of wake up in the morning and just think you know what if we have Christmas lunch at 4 or 5 in the afternoon after a good walk on the beach that doesn't matter no one's going to get stressed Well we're going to play a game or we're going to have a game on the beach and I spent Christmas with you really Yeah definitely yeah. It sounds fabulous What about you than Victoria I guess my answer is get humans to do it. Yeah I did Christmas once I think it was 2 years ago oh my God I'm not doing it again I have to cook every single day very much in the in the café so.
