For celebrity chef and Mesa Grill proprietor Bobby Flay, whole fish and pastas are his latest Las Vegas obsession as heat Amalfi at Caesars Palace.
Flay's Mesa Grill served up his celebrated Southwestern dishes at a high-profile spot just off the Caesars Palace casino floor from 2004 to 2020. Amalfi, his first Italian restaurant, is taking over that over that space, and Flay worked in the kitchen for at least a month before the grand opening June 18.
An expert fishmonger at a fresh fish and seafood display stands ready to answer guests' questions, just one of the many thoughtful service touches Flay has incorporated in the rustic, elegant space. Four seating areas include a bar and lounge with a vibrant sunset glow, a colorful limestone mosaic floor and teak wood beams.
