Lindo is a San Francisco chilean restaurant known for their empanadas. And joining us today is paula tejada with chile lindo. Paula a welcome you know i could i could smell this from a mile away as soon as they brought them into the studios. Tell us about the empanadas. We also have what looks like a dessert here today. I sent the cocktail size and the large ones and you have the traditional chilean, the classic, which is called the classic beef classic pino because thats how we call the stuffing. And then you have one with merkin. Merkin is a spice from patagonia made by the mapuche people, which are the Indigenous People of chile. You have the chicken and the for the neighborhood and the mexican staff that has been so much part of my team. I made a cheese and jalapeno recipe. That was good. It is good. Its very good. I think i have a beef one. Its absolutely delicious. Yes. And i love the way you folded the dough to the pastry. Its really different. Yeah each one has a particular fold. The classic is the traditional fold from chile. Chilean empanadas are different from argentina beans, which you tend to see everywhere. Yeah, because they are large in chile, we have empanadas every sunday, and chileans made empanadas. They their national food. So you eat empanadas for the chilean independence, the argentinians, which we see a lot of in the bay area and the peruvians are a little smaller. And i always say the peruvians have the ceviche. The argentinians, the asada and the chileans, the empanadas that they eat with wine, because chile is also a big wine producing country. Wow. A lot of everything there. Can you talk about the sunday empanada making tradition . Is it a time for families to come together for. Yes yes. Chile is a catholic country. People go to church. Nobody wants to wash dishes. They pick up empanadas on the way home from church and, you know, of course, this is like not everyone. Theres this is the more traditional conservative families you could say, but thats usually been the tradition going to grandmothers, getting together, the family having empanadas and wine for lunch. Nice and chile lindo. Ive been with the business here for 28 years. On 16th and cap, which is where im located now. I just started my new kitchen, which is called chile lindo kitchen culture, which is literally right across the street from the location thats been around since 1973 called chile lindo. Its in changed hands three times now at the new kitchen, i have a location where people can come in and im beginning to have events. Im catering and im expanding the pastries, which. You have, which are also you have the traditional version version of alfajores, which i can see your tasting now. My gosh, is that hazelnut . Whatever is in this big cookie is amazing. Oh, yeah. Its dulce de leche uh, which we call in chile. Manjar uh and youre. Its beginning to get known a little bit more and more. Dulce de leche. The difference with our alfajores is that we make we, we, we need a way for rather than make a cookie. So the way is crisp and its dough and that is to wafers are put together like a ice cream sandwich. But instead its done with the dulce de leche. And then we roll it with coconut around it. Awesome. The States Office of Emergency Services is taking their earthquake simulator on ahead of the great california shakeout on october 19th, when at 1019 in the morning, schools, businesses and even folks at home will be asked to practice what it means to drop cover and hold on.
