Bok choy at the International Space Station
NASA Astronaut Michael Hopkins has had a successful harvest of Amara mustard and “extra dwarf” bok choy in space. The plants were grown for 64 days.

“I was not surprised at all that he chose this route to make sure that the plants were fully pollinated because he’s always been very committed,” explains Matt Romeyn, a scientist from the space crop production project, in charge of the experiments on 4 plants. 
Michael Hopkins then enjoyed the bok choy as a side dish with soy sauce and garlic, according to NASA.
