42 Percent of Menus Will Soon Be Plant-Based at Hundreds of Colleges and Universities

To slash its carbon footprint by 34 percent, foodservice giant Sodexo commits to increasing plant-based meals to 42 percent of menus at hundreds of colleges by 2025.
