I was there when we had the big earthquakes.
I found out that Christchurch is the central distribution center for most of the supermarket food in the south island, and after talking to my sister who lived in Invercargill - 8 hours drive away from Christchurch - I found out that there was no bread in their supermarkets either because of the earthquakes in Christchurch.
I realised just how delicate our food system was, and how reliant we are on big companies to provide the food.
So I thought I would start a local bakery.
It would create a job for me, in which I'm very happy, and provide a healthy product to the local people, without the bread being trucked all over the country! .
