From the day we first opened our doors to the public we have been working with and serving the finest speciality coffee beans to our customers. . . We are extremely proud to be working in partnership with EXTRACT COFFEE ROASTERS who are based in Bristol. Extract source and roast the finest of speciality coffees for us on a weekly basis and we are currently serving up a 'single origin' washed Colombian bean of the 'caturra' varietal.. . Those of you who have already tried our coffee know that it is an outstanding bean and roast which is excellent both with and without milk. It is a Latin American bean meaning it has strong elements of toffee and nuts but it also has a high citrus and acidity element to it which is more often found in African beans and varietals.. . OUR MILK. . We have been using non-homogenised and organic milk since we opened which is supplied to us from the Award Winning dairy farm at the GOODWOOD ESTATE DAIRY FARM.. . EMPANADAS. . To many, we are just as well known for our food produce as well as our coffees and our Empanadas have found their own fame in the local area. We used to have these made for us by Portena in Borough Market until demand was such that we use a centralised kitchen to prepare the fillings for us before we bake them fresh every day in store. . . WINES. . Well...where do we start? We have gradually been introducing speciality fine wines to the area with a focus on Spanish and Argentine wines. We carefully select our wines only after much tasting and are extremely proud of our wine list which is ever evolving.. . We are currently serving wines from the Mendoza and Neuquen regions in Argentina as well as Ribera del Duero, Rioja and Priorat in Spain. Just come in one evening and ask us what we have in stock and we will happily talk through our wines with you.. . TAPAS. . JAMON - The world of Spanish Ham is fascinating to us. Dorian the founder of Tamp previously worked many years for Brindisa in Borough Market and developed somewhat of an addiction to fine Spanish hams. He goes out of his way to buy and import the finest hams directly from Spain and we have the two finest names in the ham world in store - 'JOSELITO' and 'CINCO JOTAS'. . Our selection of Serrano and Iberia hams are carved by Master Carver - Roger Pasto Cortina from Barcelona who has previously worked carving ham for Ferran Adria (of El Bulli).. . CURED MEATS & CHEESE. . All of our produce goes through a rigorous selection process and nothing below excellence will be served up on our counter. This goes for all of our cured meats and cheeses which are supplied to us by BRINDISA in Borough Market.. . . . FISH. . Okay, so this is both new to you and to Tamp. We are starting to develop and roll out a concept which up until now only exists in Spain and Portugal. The reason for this is cultural. The Spanish and Portuguese package fine foods in a way we are not accustomed to here in the UK. Even top Michelin starred chefs regularly use tinned fish in Spain. This is because the preparation and packaging processes are also prepared by chefs and ensure the highest of quality and maintenance of the produce.. . We are currently serving produce from ORTIZ, NARDIN & CONSERVAS DE CAMBADOS who set the benchmark in terms of preparing and sealing the highest quality seafood and presenting in in beautifully designed packaging.. .
