San Antonio Taco Company was conceived by two Vanderbilt University graduates and natives of San Antonio, Texas. A corporation was founded in July of 1984 to develop and operate an authenticTex-Mex restaurant in Nashville.. . The first restaurant, located on 21st Avenue in the Vanderbilt area of Nashville, opened in the fall. Both founders worked the counter and in the kitchen.. . San Antonio Taco Company (SATCO) caught on quickly with locals, who included students from Vanderbilt University, professionals from Vanderbilt Hospital across the street, and artists from the nearby "Music Row" neighborhood. The rest, as they say, "is history".. . In November of 1990, the original owners sold SATCO to two other Vanderbilt graduates, who continue to own it -- keeping the tradition alive.. .
