As the ice begins to melt on the lakes in Northern Manitoba and life returns to the forest, we start to get busy to tap our birch trees. The sap has been protected from the cold and is now returning to the leaves. We take a small percentage of the total sap and evaporate the water to make syrup! Birch Syrup is gourmet syrup- it's not your everyday table syrup. Use it in glazes on meat and chicken; mix it with BBQ sauce for a unique flavor!
