Detailed description is Martina R. Burrell - Owner/Certified Chef/Atmospheric Food Artist of Ma'Tina's Cooking and the love of feeding people has been a passion that has developed into a lucrative business. This started early in my life by watching my grandmothers, mother to helping my grandfather at his BBQ Place. Known for playing in my food and creating my own Kool-Aid combinations, mixing meals and my juices to create just to see what the flavors would taste best. I would take every opportunity I had to cook, at church bake sells as a child; cooking home fries and burgers for my brothers and sister when we were younger; or as an adult preparing meals for my family, friends and shelters.. I developed many of my own spices for my personal cooking without salt, sugar or preservatives, which came about because of a childhood illness. I decided many years later that I would make my own spices to taste like I wanted them to taste taking out what I did not like and adding what I did to create my own version of various seasonings such as Ma’Tina’s Chipotle Seasonings and Jerk Rub. Over the years, I would share these spices with family, friends and co-workers who suggested I sell them. One Saturday while shopping at our local farmers market, with my closest friend, and biggest supporter, my friend dared me to ask a local merchant to sell my spices or she would. She believed in the product so I took a deep breath, and my friends, advice and walked into Findley Farmers Market, Mediterranean Imports Store to ask the owner Dean if he would be interested in selling my Chipotle seasonings in his store, took him a sample he tried the seasoning, and he loved it. He agreed to sell on commission, well that was over 8 years ago, and I have a large clientele using my chipotle and taco seasonings. . Although I have worked in corporate America for many year prior to staring “Ma’Tina’s Atmospheric Foods” such as KPMG one of the big four accounting firms in Cincinnati for 13 years and Loyola University Medical Center and Loyola University in Chicago, Illinois for over 14 years. Along with my many travels all over the world, which has allowed me to experience many culinary processes, tasting of the locals food and gave me the opportunity to collected menus from many of the families I have become acquainted with. . Upon the outsourcing of my job from KPMG to India in November of 2009 and graduating from the University of Phoenix in December 2009 with a bachelor’s degree in Business Management with a concentration in Marketing, I was unsure what to do. However, with the support of my companion, Jeff, my son Randy and my family I decided to step out on faith and start laying the foundation for Ma’Tina’s. I researched, asked questions from city officials and got all the licensing she could find that was required to start the business prior to my layoff.. . Although, many people call me chef, I do not have a culinary degree therefore, I do not consider myself a chef, thus the creation of the self -title “Atmospheric Food Artist”. I created this name for myself based on my family and friends reaction to how they felt after tasting various dishes and sampling of my foods. Many have asked what is an “Atmospheric Food Artist”. Well Atmospheric expresses the mood the foods I cook create for the person enjoying my creations. The Food Artistry is the unusual creations and combinations put together for a memorable taste and the presentation for the initial appeal. Atmospheric gourmet food creations made with love. Moreover, this is why, I consider myself an “Atmospheric Food Artist” who also creates and sells preservative and salt free gourmet spices, desserts and specializing in a variety of custom cheesecakes. Additional services consist of hosting of private parties, catering, and Personal Chef Services. Jeff is great with marketing and the talking to the public, which provides a great balance to my abilities and this balances the business. He was laid-off, two months later and we put their heads together and decided as a marketing approach we would do daily meals. Thus, the birth of my “Daily Meal” was born which is a way in which to introduce the public to the unlimited possibilities of my culinary abilities. I am responsible for ordering supplies, purchasing foods and handling the food, preparation with close monitoring to temperature control and service design and food placement. Since pursuing my passion for cooking, I have made a collection of menus introducing a gourmet twist to some old favorites while introducing my clientele to new and exciting meals. I am responsible for creating and implementing seasonal fruits, vegetables and wines into my menus. The concept of the business is to create meals that express the type of event that the client is striving to show.. Since last year, I have developed many other signature specialties such as my alligator Jambalaya, Caramel Banana Pudding, Signature Salad, Raspberry-Triple Chocolate Mousse Cake and my list of over 38 variations of cheesecakes, a couple of my top sellers such as black raspberry, key-lime and creamsicle cheesecakes. My spices and cheesecakes we ship to other cities for private parties and catering events. I believe in taking baby steps, which has lead to my expanding the business one-step at a time to where we are today. I enjoy feeding people, introducing them to new and exciting foods and the creation of Ma’Tina’s, Atmospheric Foods allows me to do just that. . . I continue to serve my communities, as much as I can for such organizations a Prospect House, CCAT House, Gospel Mission and other organization who contact me when I can help them out. I graduated and received a food service certificate of completion from Cincinnati COOKS! Food Service Job Training Program. The program teaches food safety, sanitation, knife skills, and commercial kitchen operations and provides over 150,000 meals a year for hungry children in the community. .
