Sein Vater, Besitzer einer Brauerei am Michelsberg lernte seine Frau in der ehemaligen Gaststätte „Blaue Glocke“ kennen. Unter diesem Stern konnte offenbar nur ein Gastronom herauskommen. Schon in ganz jungen Jahren habe er bei seinen Eltern gerne mitgekocht, erzählt Hans Peßler. Was also lag näher, als das fortzusetzen, was ihm einfach Spaß macht? Dabei konnte der gelernte Koch, den halb Bamberg als „Hansi“ kennt, sogar noch ein weiteres Steckenpferd, die Musik, in seine Arbeit einbinden. 1992 hob er und Heiner Sauer das „Hofbräu“ im historischen Gebäude einer alten Münzerei aus der Taufe und sorgte fortan nicht nur für eine bodenständige Küche, sondern auch dafür, dass in dem Haus in regelmäßigen Abständen Live-Musik geboten wird. Wenn ihn die rechte Laune packt, greift Hansi außerplanmäßig auch schon mal zu den Trommelstöcken und gibt am Schlagzeug sein Bestes.. . Im Restaurant mit dem gepflegten Jugendstil-Charakter erwartet die Gäste jeden Montagabend Piano Live und einmal pro Monat auch der Auftritt einer Band. Auf den Sitzplätzen vor dem Haus lässt sich genüsslich das Bamberger Stadtleben beobachten, da hier irgendwie jeder vorbeikommt. „Das Hofbräu hat es in 18 Jahren geschafft, sich die Treue des einheimischen Stammpublikums zu sichern und auch die Gäste des Welterbe zu bewirten“, kommentiert Hansi Peßler die Entwicklung.. Kulinarisch gelingt ihm die Verbindung zwischen regionalbezogener herzhafter als auch leichter gehobener Kost. Der fränkische Einschlag wird durch Mediterranes, Exotisches und auch originellen Kombinationen, wie z.B. Rotweinbratwürsten mit Zwiebelconfit zum jährlichen Hausfest aufgelockert.. Neben süffigen Bieren verfügt das Hofbräu über hervorragende Weine von fränkischen Winzern. Die umfangreiche Weinkarte mit internationalen Weinen aus aller Welt schließt das Angebot stimmig ab..
