L’objectif de leur engagement dans ce projet collectif est de faire découvrir, partager et préserver un savoir faire local unique.. . Le projet « Fourchettes & Saveurs de la mer » propose un cadre de collaboration et d’engagements réciproques entre les restaurateurs du Pays Marennes Oléron et les partenaires des produits de la mer frais locaux et de saison afin d’assurer l’introduction, la promotion et la consommation de ces produits.. . De juillet 2012 à juin 2013, les quatre filières vont solliciter les restaurateurs du Pays Marennes Oléron et les inciter à participer autour de six moments forts d’une semaine chacun qui mettront à l’honneur les produits de la mer frais, locaux et de saison.. . Outils de communication grand public, aide à la mise en relation restaurateurs/producteurs, et information des restaurateurs sur les spécificités des produits sont fournis au « restaurant partenaire », qui, en contrepartie, s’engage à proposer à ses clients les produits frais, locaux et de saison pendant les dates des événements auxquels il participe.. . L’originalité de « Fourchettes & Saveurs de la mer », c’est sa démarche collective. Elle réunit, au fil des saisons de production et de pêche, une gamme de produits emblématiques des métiers de la mer locaux : Huître Marennes Oléron Label Rouge, Moule de Filière, Moule de Bouchot, Céteau, Maigre, Merlu, Langoustine, Crevette Impériale et Salicorne en Marais.. . Ce projet a été rendu possible grâce au programme de l’Axe 4 du Fonds Européen pour la Pêche mis en œuvre par le Pays Marennes Oléron. Il participe au renforcement d’une dynamique locale autour de notre patrimoine et identité maritime.. .
