Detailed description is I cook competition style barbeque. I inject my meats and apply unique rubs to add additional flavor. I slow smoke on a Southern Pride cooker. My Barbeque is the same level of cooking seen at the world championships. I have been trained by multiple world champions and use many techniques that they have used when competing. I have also applied some of my own techniques that I have perfected over many years. I use different woods and different injections in my meat which add to the flavor profile. I am always trying different injections and rubs which means that everyday can be a new experience. I will only serve a product if it meets the quality standards that are required at the world championships. This level of barbeque is not sold in most restaurants due to the time and cost of preparing meat to be cooked at this level.
