Fondée à la fin du XIXe siècle place de la mairie à Bray-sur-Seine, l’auberge Au Bon Laboureur est devenue au fil du temps un lieu incontournable dédié aux gourmands. L’affaire familiale a été reprise en 2002 par Gilles et Lorène Monti, deux passionnés qui se sont rencontrés sur leur lieu de travail, un prestigieux palace de Courchevel. Originaire du pays Niçois, Le CV du restaurateur est d’ailleurs impressionnant, avec un parcours qui l’a vu travailler à New-York, Londres, Paris, Courchevel, en Corse et sur la Côte d’Azur.
