The Lab’s menu will change with the seasons, as our Chef Josh Welton explores the bounty of our local produce, meats, and seafood. The earth is alive with flavors, colors, and textures. As we experiment with both traditional and novel combinations and preparations, our goal is to nourish, delight, and comfort you.. . This concept continues behind the bar where mad scientist Paddy Holland mixes his delicious potions for our guests’ imbibing pleasure. Cherimoya? Swedish Cloudberries? Passion fruit? Tamarind? Everything is fair game in our quest to create the most wonderfully eclectic elixirs around.. . My goal and intention for both restaurants, The Lab and Agate Alley Bistro, is to make an indelible mark on the neighborhood we share with all of our friends. I want each of our guests to feel like our place is their place.
