The pandemic has changed the way restaurants do business and some continue to adapt.Business is heating up at Yorgos during Lancaster City Restaurant Week, following a winter of restrictions.Getting bar service back helps. People sit down and talk, owner George Katsaros said.Yorgos developed new recipes for success in order to survive, as did restaurants across Lancaster County.Some changes may be here to stay. Our curbside pickup has been really popular, said Tara Peifer, manager at Bird-In-Hand Family Restaurant & Smorgasbord.Bird-In-Hand reopened its buffet last summer with protocols to ensure safety. Usually we have two sides of our buffet open. We only have one side open. We ve really taken great care in making sure that our guests feel safe and comfortable eating off of the buffet, Peifer said.With dining rooms starting to fill up again, restaurants need more help.
