Prey & Tell specializes in Cambodian-style fried chicken with house-made sauces.
Back in January, we were both saddened and excited to report chef Diane Lam would be putting her contemporary Cambodian pop-up, Sunshine Noodles, on hiatus until the spring while she launched a fried chicken takeout and delivery ghost kitchen concept, Prey & Tell. After a single bite of Prey & Tellâs crisp-battered fried chicken wings dipped in French-Cambodian ranch sauce, though, we were sold. Now, Prey & Tell has gone on hiatus earlier than expected, but itâs for a good cause:

And this food looks like a draw in and of itself.
Lamâs gluten-free chicken wings are sold in quantities ranging from five to 20 wings. Add on a rice pack, beautifully wrapped in a banana leaf, for a complete meal. Options include the Healthy (cauliflower rice and herbs), the Street Style (rice with crushed dry ramen), and the Cutie (rice with edible glitter). Dip your wings in one of Lamâs house-made sauces, including French-Cambodian ranch, makrut limeâbuffalo, and fish caramel emulsified with lard and butter. Prey & Tell will be open Wednesday through Sunday, 4 p.m. to 2 a.m. (a late-night rarity in Portland). Order delivery or pick up at 3560 N Mississippi Ave via Prey & Tellâs website.

Diane Lam of Sunshine Noodles is launching a new chicken wing ghost kitchen concept.
Even before I physically stepped foot in Portland, I knew that Sunshine Noodles was special, from its potato chip salad, chile relleno banh xeo, and lime-pepper chicken wings to its COVID-conscious outdoor patio with
Dance Dance Revolution-style arrows and cartoon noodle bowls painted on the ground as social distancing markers. The contemporary Cambodian pop-up, which opened over the summer at Psychic Bar on N Mississippi, was one of our picks for Best Restaurants 2020. From the beginning, we knew that Sunshine Noodlesâs residency at Psychic Bar would come to an end in early 2021, and that made the place all the more special. Now, that time has come:
