Everyone loves a great Anzac bikkie and these ones are even better because they are made with whole, unprocessed everyday pantry staple ingredients. If you are struggling to find certain ingredients, you can, of course, easily swap the ingredients listed for something else more tradtional ie plain flour instead of spelt flour, butter instead of coconut oil and brown sugar instead of coconut sugar. But this version is particularly rewarding!
Ingredients
Preheat the oven to 180C and line baking tray with baking paper. Set aside.

It s amazing how fire can transform raw ingredients into something so delicious. Having toured the extensive permaculture garden at Sherwood alongside Head Chef and co-owner Chris Scott, I returned to the restaurant where, before my eyes, sous chef Vinni gently shaped a ball of dough into a disc, scattered over a few carefully chosen toppings, and posted his creation into the hellishly hot wood oven sitting bench-height in the open kitchen. In no time I was sitting at a table with a substantial late afternoon snack staring up at me: the dough puffed up, blackened blisters cracking to reveal the airy crumb within.
Pact signed to ensure ample supply of staple products

Muscat: The Ministry of Commerce, Industry and Investment Promotion on Tuesday signed a programme of cooperation with the Consumer Protection Authority (CPA).
The programme comes within the context of integration among government establishments and units.
It reflects the two sides’ keenness to fully utilise their prerogatives and coordinate towards the accomplishment of their common goals.
The cooperation memo was signed by Dr Saleh Said Massan, Under-Secretary of the Ministry of Commerce, Industry and Investment Promotion, and Salayum Ali Al Hikmani, Chairman of the Consumer Protection Authority.
The programme aims to develop investment in the Sultanate in a manner that guarantees the abundance of commodities and staple products in local markets. It also seeks to ensure the quality of the goods and the stability of their prices.
