Dancing Goat Distillery builds Wisconsin’s first open-air rickhouse
Big things are happening at the Cambridge-based distillery.

Dancing Goat Distillery is not ready to welcome back guests to its tasting room yet it’s been closed since December 2019. But in the meantime, the team has been working on big things.
Vice president of distilling and innovation Nick Maas and his team have created the state’s first open-air, non-climate controlled rickhouse. Dancing Goat is one of only a few craft distillers in the country to use the traditional open-air rickhouse method to age their spirits.

After the hospitality industry began reopening last week, and alfresco dining and drinking became the ‘new normal’, Wendy Baker was somewhat ahead of the curve – by 20 years.
The artisan co-owner of the Dancing Goat Café in Framlingham, which is also her home, was one of the first to introduce outside seating in 2001 when she opened their café.
A proud Liverpudlian, Wendy is equally at home championing art and education, to working on her next creation, or enjoying the region’s countryside and coastline, with her partner Dan and their daughters. Here she talks to Gina Long.

The Dancing Goat Distillery in Cambridge, Wisconsin has begun rolling barrels of its award-winning Limousin Rye Whiskey into its new open-air rickhouse. Rickhouse #1 at the Dancing Goat Distillery, is the first non-climate controlled rickhouse built in Wisconsin. It is the first of five being planned by the craft distillery.
Rickhouses have been used for more than 140 years to age whiskey. The building is designed using floors of ricks that allow the barrels to be rolled in and stored on their sides, giving the whiskey exposure to the wood on all sides versus the more modern palletized or stacked warehouse storage systems where the barrels are stored on end and the top side charred wood does not contact the whiskey. Dancing Goat partnered with the leading rickhouse designer and builder, Buzick Construction of Bardstown, Kentucky.

By the last day of November, the Buccaneers’ grand football experiment was tilting closer and closer to failure.
