A special dough and cooking process are some of the secrets behind Indiana-based Azzip Pizza s launch of a boxy personal pizza, appropriately dubbed the Square Zip, according to a news release.
The 7-inch-square pie bakes in two and a half minutes and made with a high-hydration dough and twice-baked process that creates a fluffy inside and crispy bottom with a buttery flavor that s augmented by the pie s triple-cheese blend that caramelizes on the pizza s edges. The Azzip team said the pizza was created an alternative to the pies made on the brand s circular flaky crust.
EVANSVILLE, Ind. Azzip Pizza is introducing a revolutionary new entree – the Square Zip, a thick and soft pan pizza built to order and ready in two-and-a-half minutes.
The Square Zip was inspired by Detroit-style pizza, but Azzip founder Brad Niemeier and chef Blake Kollker stayed away from the Detroit designation because they wanted to leave their creative options open while achieving the elements that make Detroit pizza delicious.
“We’ve always loved that pan-style crust,” Niemeier said. “The crispy crust with cheese all the way to the edges, we love it, and we’ve talked for years about whether it would ever be an option at Azzip.”
If you ve read any of my previous articles about pizza, or you ve heard me talk about it on the MY Morning Show, then you know I can t have a pizza discussion without mentioning Azzip Pizza. I love all kinds of pizza, and support as many local pizza joints as I can, but I would be lying if I didn t say that Azzip is my absolute favorite. I could go on and on about why, but I ll spare you. I ll just get to the exciting news and the reason for this article.
Azzip Pizza just announced that they are adding a new item to their already delicious menu. The Big Zip and Lil Zip will now be joined by the Square Zip. According to Azzip, The Square Zip (the name Thicc Zip got shot down) uses a new house-made dough that we bake in 7” x 7” blue steel pans that give it a crispy, golden, caramelized 3-cheese-blend-to-the-edges crust.
