The Daily Northwestern | Caffeine and Community

April 28, 2021 I knew that Coffee Lab & Roasters was a joyful place the first time I walked in on a gloomy Saturday morning, ordered a large cappuccino and was greeted with a smile and four shots of espresso in a 12oz cup. And while it’s the perfect place to go if you like your coffee strong and delicious, accompanied by delicious pastries and snacks, the shop on 910 Noyes St. is more than just a place for a caffeine fix. Coffee Lab was founded in 2010 as an offshoot of Garrett-Evangelical Theological Seminary, but has since changed hands a few times and separated itself from the divinity school. In May 2019, couple Jay Kim and Daniel Aquino became Coffee Lab’s new owners. Aquino had worked there for a while under the previous ownership, and Kim is a Ph.D. student at Northwestern.

As director of the Solidarity Building Initiative at McCormick Theological Seminary, she helps bring a liberative higher education program to those incarcerated at an Illinois county jail. She’s also seen how theological education nurtures humanity – at both ends of the spectrum.

YoFresh Yogurt Cafe s Larry Murphy featured in PBS documentary

For Dr. Larry G. Murphy, his approach to faith and equity traces back to his time as a religious studies student at University of California, Berkeley in the 1970s. “It was really formative in how (my wife and I) came to view the world and our place in it, and how to be advocates for equity,” said Murphy, who Evanston residents best know as the co-owner of YoFresh Yogurt Cafe. A historian, professor and religious leader, Murphy recently worked as a script consultant and an interviewee in the making of a PBS documentary entitled “The Black Church: This Is Our Story, This Is Our Song.”
