The three pillars of any good dining experience are arguably pretty straightforward: food, service, ambiance. Cacio e pepe, a traditional Roman pasta dish that can easily be a part of your weeknight dinner table, can also come in nontraditional forms.
To create a proper cacio e pepe which means “cheese and pepper” medium-aged sheep’s milk cheese (Pecorino Romano does the trick!) and an abundant amount of ground black pepper are combined with a ladleful of pasta water, creating a cheesy-peppery sauce. This sauce is then tossed with al dente tonnarelli. This simple pasta dish is minimal in ingredients and robust in flavor, and it perfectly captures the rustic beauty of Roman cuisine.

“If your favorite restaurant is offering takeout food and drinks on New Year’s Eve,” says Doug Schantz, owner of Nellie’s Sports Bar, “then that’s what will be special this year!”
To be sure, a number of restaurants are offering specials for New Year’s, doing what they can to help customers end an exceptionally trying year on a high note in whatever safe, socially distanced way they can. Given the District’s current restrictions, including a ban on indoor dining, several restaurants have devised novel, appealing ways to close the books on 2020. And a few cherished establishments in the LGBTQ community are doing what they can to be open and operational, even if that means less elaborate NYE offerings compared to years past.

 For the past 20-plus years my final column of the year is always a list of the top dining experiences I enjoyed throughout the previous year. Typically, itâs a pretty easy piece to write.
For the past several years I have spent two or three months working in Italy. Over there, one can find a memorable dining experience around every corner and down almost every cobblestone street.
