Cayuga County breweries agree that COVID-19 has made the last year a transformative one for their industry. But there s less consensus about how they be affected by the recent legalization of marijuana in New York state. For this edition of Cayuga County Craft, I asked our breweries to look back and look ahead: How has COVID-19 changed beer over the past year? And how might legal marijuana change it over the next? All the breweries who responded were quick to describe how the pandemic has disrupted their business. The major change, they said, has been the precipitous drop in traffic in their taprooms due to both New York state guidance and customer discretion. As a result, packaged beer has become a much bigger priority for them than draught beer. More of their product is going in cans than in kegs, if not all of it. So breweries like Aurora Brewing Co. in Ledyard and Prison City Brewing in Auburn can not only sell more beer to go, they can distribute it to stores they ....
LEDYARD â Adding a kitchen to Aurora Brewing Co. accidentally set in motion a six-figure renovation project that made its owners reconsider staying in business altogether. But they re glad they did, they told The Citizen Friday in the brewery s gleaming new taproom. Because now they re having more fun with that business than ever.  Compared to the small, dingy taproom Mark Grimaldi and Joe Shelton opened in 2015, the new one suggests customers are standing in a completely different brewery. Raw studs and drywall have been replaced by white tile backsplash and a matte black tin ceiling. Behind the bar, a mural the size of a billboard casts Aurora s logo against the oceanic blue can art of one of its beers. ....

Cayuga County s breweries entered 2020 with momentum. COVID-19 slowed that momentum â but didn t stop it. Like many businesses, local breweries have been punched in the gut by the pandemic. The first blow landed in March, when the virus itself did in the U.S., and New York state limited craft beverage producers to off-premises sales to help slow its spread. Sure, social distancing led to a global rise in alcohol consumption, so Cayuga County s breweries had little difficulty getting rid of their product. But that benefit was erased, and then some, by all the empty chairs in their taprooms. A glass of beer, after all, generates up to twice as much revenue as a bottle or can of it. ....
