View Comments A buildout is underway at 2108 Medical Center Parkway, at the corner of Livy Dearing Place.  Cajun Steamer s history According to the company website, Cajun Steamer started as a roadside stand selling crawfish fresh from Louisiana.  In 2005 the first brick-and-mortar opened in Hoover, Alabama, followed by locations in Trussville, Huntsville, Alabama and Franklin.  The menu focuses on Louisiana-style boils featuring fresh crawfish, Gulf shrimp and oysters, and classic dishes like crawfish etouffee and shrimp and grits. There are also po boy sandwiches, burgers and tacos. Louisiana native and LSU graduate Harper Hollis is transferring his spot as general manager of the Franklin store to take the helm of the Murfreesboro location.
