Inspections are overseen by the Department of Agriculture. The department notes that in many cases violations are corrected by the restaurant before inspectors leave. KENTUCKY FRIED CHICKEN Observed deep fryers and casters heavily encrusted with grease and old food accumulation. Observed cooking and holding equipment, in deep fryer area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. The quaternary ammonia concentration in the sanitizing solution of the three wiping cloth buckets was less than 50 ppm, rather than the target 200 ppm as stated on the manufacturers use directions.
