The story of White Cup Espresso...
Hello, my name is Chris and my sister is Kim.
We were raised on Long Island, New York and grew up in the town of West Islip during the 1960's.
We had great childhoods partaking in many outdoor activities including saltwater fishing, boating and camping.
Our parents had one of the first 1965 mustang convertibles, a snazzy poppy red pony car with wire wheels, trunk mounted chrome ski rack, horse head bumpers and horse cry horn.
What an automobile that turned heads everywhere we went! As kids this car made us feel different and special, in a good way.

Then in 1966 we moved to a small town called Weiden in West Germany, to live with our German grandparents on our mothers side.
My German grandfather was a respected and self made realtor.
He owned a 3 story home with several apartments which were rented out.
Our family lived on the 3rd floor and grandparents in the nicest apartment on the 1st floor.
Our grandfather Josef Ziegler, was a wonderful man who made us kids feel special and always did his best to ingrain in us right from wrong.
At the time he drove a pearl white Mercedes Benz diesel, with a shiny chrome hood mounted star emblem.
Another special car with many fond memories during our 3 year stay.
My grandfather always said the star would help to guide us along the right path and this helped to impress upon us kids that hard smart work rewarded.

So for 3 years we attended a German school, obviously learning to speak another language.
We were raised to be self reliant.
The idea of becoming successful, by business ownership was ingrained.
When we returned to the United States instead of going back home to New York where our American grandmother lived, our father dreamed of moving to Washington State, where we saw photos of beautiful Mt.
Rainier, and apples as big as our heads! We ended up in the Bellevue area, where our father became a professional photographer and commercial movie maker.
We'll never forget the day when our parents opened up on a shoestring Photo Safari, a photo lab in Bellevue Washington.
We specialized in photography, big color enlargements, rental darkrooms, movie making and eventually film processing.
During that time us kids were fully involved in the business and I even gave up a possible football career just out of High School/college.
At the time I felt as a business owner, why should I get beat up on the field.
The business would be my path, and a decision I sort of regret today.
Who knows, I was pretty good at the game and might have become a Seahawk player! But that was not to be in the cards.
The photo business was.
Eventually we lost our business lease as the property our building was on had become much too valuable and big buildings stand there today.
Fortunately we were able to secure another location right on busy NE 8th Street.
There we changed our name to Eastside Photo Lab and successfully expanded our film processing services, at the time called 1 Hour Photo.
While the average 1 Hour Photo nationally processed an average of 50 rolls of film daily, through clever marketing by Kim and I, we ended up processing some 250 to 300 rolls of film a day! We even offered a delivery service as far out as Seattle and Everett.
We had several big home appraisal accounts, including several government accounts including film processing for the State Patrol.

Well nothing lasts forever and while we had been riding high for several years, our demise came quickly with the digital photo revolution.
Suddenly customers no longer needed as many pictures.
They simply loaded needed images on their computers and our daily roll count started declining.
We did make an attempt to embrace digital and purchased new digital processing equipment that could process a roll of film in 15 minutes and also print photos off camera memory cards.
But digital processing was still young and customers were now into printing their own photos at home.
This was a whole new ball game for us and it was like starting over.
Disappointed we chose to sadly close Eastside Photo Lab forever.

At the time I felt I needed a break and decided to move to the Olympic Peninsula, where I and my High School buddy Brian had often recreated at his cabin on the Straights near Joyce.
There we partook in salmon fishing and camping.
I loved the outdoor activities the Peninsula offered and thought if I moved here I might play more, eventually figuring out something to do for an income.
I ended up buying my first home in Sequim, a small town I instantly fell in love with! Also Sequim was centrally located and closer to Bellevue for when I went to visit family.
For nearly 3 years I relaxed in Sequim, every morning waking to fresh air and a fabulous mountain view.
Why Sequim was paradise! Much to my delight both my parents and sister followed in my footsteps, eventually moving to Sequim too.

While living here there were often pleasant thoughts in the back of my mind, of what sort of business to open or start.
What business or service did Sequim need and how could I contribute to improve our community? Options seemed endless in this beautiful town and I wanted to do something different and less stressful than running a photo lab.
Eventually I decided that I wanted to open an ice cream shop.
Why that sounded like a fun business! It was during a brain storming breakfast at Granny's Cafe near Lake Sutherland, a friend and I came up with a fun name for the future ice cream shop.
Coneheads! It seemed perfect because Coneheads were people who loved their ice cream too much! That set the ball rolling.
Then suddenly my sis Kim wanted in on the venture, only she wanted to add espresso to the mix.
Yes, coffee and ice cream seemed perfect.
So we searched for a good location, and found one on the corner of 3rd Avenue and West Washington Street in Sequim and right next to the wonderful Oak Table restaurant and busy Thomas Building Center.
This location used to be home to an Arco gas station, only where we wanted to set up shop was right on the corner, which at the time was just pavement.
With help from our generous and understanding landlord to be, along with encouragement from the City of Sequim, we were able to erect a small and very unique building.
The building was of our own one of a kind design scratched out on a napkin! We wanted a retro 50's look with cars crashing through the upper walls.
After all we were to become a drive thru! We met with a builder in Port Angeles called Retroville Construction and asked if he could build the building drawn on our napkin sketch.
There were no plans whatsoever and much to our surprise the builder said yes! .

Before long the lesson in construction began and we broke ground.
That was more than 11 years ago.
It only took 3 months or so to complete the project, despite this being all new to us.
There is no doubt our construction project brought much excitement and speculation to Sequim.
Especially the 2 57 Chevys crashing through our walls! .

We hired a staff and opened on a hot summer day.
We'll never forget that day because we were mobbed with customers and we never anticipated such a welcome from the good people of Sequim! The worst part was at the time we really did not know what the heck we were doing! Why we had no experience in the food service industry.
We did our best even though our production flow was all wrong and we spilled countless drinks and cones of ice cream that first day.
There were at least 7 of us in the shop and one did not know what the other was doing! What a beautiful mess and again much to our surprise our new customers did not seem to mind.
Thank you Sequim! We also played 50's music over outdoor speakers and often customers felt compelled to dance in the street.
Why they were dancing together! .

Eventually we learned to get things right, always striving to serve the best products we could.
Our menu grew to 30 flavors of hard ice cream, espresso drinks, shakes and fun food items.
We even served a mountain of Chili Nachos, the kind you would make at home and hot dogs, including one called a Man Dog.
That was a huge Andouille sausage smothered in a special thick chili and cheese.
Every time we served a Man Dog we were required to all yell out "Man Dog" together, for every customer to hear! Eventually we added bagels and even Ivars famous clam chowder.
Everything we served was fresh, good and in large portions.
The only problem was as a drive thru customers expected to be served fast.
It turned out all that good food and hard ice cream just took too long to prepare and many coffee customers waiting in line ended up driving off.
The wake up call on this was learning our real profits were in the coffee drinks.
The near gourmet food we were serving, was simply costing too much to prepare.
Plus there was no way we could accept serving lesser quality food products in the name of faster service.
Yet drive thru customers demanded fast service, the convenience of the drive thru concept.
Sadly the reality of this had to be dealt with.
Especially if we wanted to stay open and in business.
So reluctantly we decided to reduce our food offerings and concentrate more on drinks.
It was with sorrow we even decided to eliminate our hard ice cream.
The hard ice cream was just sometimes too hard and difficult to scoop in a timely fashion for a drive thru.
But we did kept our soft serve ice cream.
Thank goodness for that as letting go of my ice cream dreams seemed impossible! .

From the beginning we chose to serve Diallonos coffee because while more expensive we felt Dillanos was consistently smooth and produced delicious coffee drinks.
Dillanos is roasted near Puyallup, Washington.
We've always been proud serving the customers of Sequim Dillanos and have always insisted serving our coffee drinks in cups branded with the Dillanos name, which were supplied to us by Dillanos.
Then suddenly a few years back Dillanos had a printing problem with their cups.
Their colors were bleeding and while Dillanos was trying to resolve this situation, they offered us plain white cups to use until a solution could be found.
Well several months went by and we were still using plain white cups for our coffee drinks.
After six months I called Dillanos asking when we would be receiving their new printed cups and got the same answer, soon.
Frustrated I declared...
heck, since we were using plain white cups for so long, we might as well change our name to White Cup Espresso! Believe me, that never was the plan.
But for some silly reason this frustrated thought started to sound interesting.
Really, I think that was my way to try and get Dillanos to get us their cups like now! Several more months later we were still serving our drinks in plain white cups, and for better or worse we decided to go for it and changed our name to White Cup Espresso.
Even though we will always be known as Coneheads and to this day many refer to us as just that! Yes we sort of regret that decision, but at the time it made sense.
White Cup Espresso better defined us as a place for good coffee.
So now you know why we are called White Cup.

Funny how some things work out, but it was only a short time later and after our name change Dillanos started offering again their new and improved printed cups! So today White Cup Espresso serves Dillanos coffee drinks in brown printed Dillanos cups! But we still do use a white lid.

Our business goal remains and has always been to provide the people of Sequim with above average products.
We never skimp and insist on the same quality we would ourselves expect.
We take pride in using the best possible ingredients and not the cheapest.
Also we do our best to make White Cup a fun and friendly place.
We insist our staff and baristas have fun, and that's hopefully reflected in our customer service.
We're always striving to improve and keep pricing as low as possible, while still earning a fair profit.
Our business has never been just about the money.
Believe me, there are easier ways to earn a living than running a 7 day a week coffee shop! We're in the service business and are expected to serve.
